1. Coffee aroma gradually dissipates

Most of coffee bean's aroma is developed during roasting, and both aroma and carbon dioxide dissipate over time. The beans are typically most fragrant within several days after roasting, then slowly lose their aromatic qualities over time. Most coffee shops or e-commerce retailers package coffee beans in bags with one-way degassing valves to prevent aroma from escaping. You can also store coffee beans in airtight containers, only opening them when you're ready to brew.

Never grind beans in advance, as this causes aroma to dissipate much faster and introduces additional factors that diminish fragrance, such as oxidation.

Initially, aroma increases more than it dissipates; after two weeks post-roasting, the increase in aroma slows down, but dissipation continues. Therefore, the optimal flavor period for coffee beans typically occurs between one to three weeks after roasting. This represents the prime tasting window. However, each coffee variety has different characteristics and roast levels, so optimal tasting periods will vary somewhat.

However, strictly speaking, the optimal tasting period doesn't represent the actual shelf life of coffee beans. Generally, unopened coffee beans can be stored for three to six months, but different countries have varying perspectives on this matter. For example, Korea considers coffee beans good for one year, while Germany applies much stricter standards. Regardless of these variations, consuming your coffee as soon as possible is most important!
