Introduction
Finca El Injertal is located near the small town of La Democracia in the Huehuetenango growing region of northwestern Guatemala. It was founded in the 1930s by first-generation owner Jose Olivio Chavez.
This estate is renowned for producing high-quality coffee and is one of the most famous estates in Guatemala's coffee industry. It is now managed by the third generation of the family, his grandson Jose Alejandro.
The estate family has been unique in its concepts of sustainable operation and environmental friendliness since the first generation. The total area of the estate is 83 hectares, with 70 hectares planted with coffee at altitudes ranging from 1,200 to 1,650 meters. Varieties include Caturra, Bourbon, and Mondo Novo, while 13 hectares are preserved as primary forest to support diverse bird ecology and habitats.
The estate has multiple natural hot springs that can provide energy for the water treatment plant. The estate grows shade trees that not only provide shade for coffee plants but also prevent soil erosion and increase soil organic matter content. Finca El Injertal holds Rainforest Alliance certification.
What makes this batch of El Injertal special is that the coffee is grown in sandy volcanic limestone soil. The high altitude, fertile soil, rich ecosystem, clean water sources, and human factors contribute to this estate's famous and distinctive style, making it representative of excellent Huehuetenango coffee. Its flavor and quality performance stands out among coffees from this region. The production control processes, including harvesting, washing, hulling, grading, and cupping, have won it recognition as the highest quality and most prestigious estate coffee locally.
Coffees from Guatemala's Huehuetenango region always reveal a subtle mineral-like aroma. Furthermore, the altitude of the Huehuetenango region is quite special—coffee farms can be cultivated at high plateaus up to 2,000 meters.
Guatemala is located in the Central American isthmus, with many high mountains and plateaus formed by volcanoes, producing high-quality Central American high-altitude strictly hard coffee beans. It is the world's 9th largest coffee-producing country. Guatemala's main coffee-producing regions include seven major areas: Antigua, Huehuetenango, Atitlan, Coban, Fraijanes, San Marcos, and Acatenango.
Among these, the most distinctive region is undoubtedly the northernmost Huehuetenango region. What makes it special is the sandy limestone soil, whereas the most common soil in Guatemala is volcanic soil. Perhaps for this reason, Huehuetenango coffee has fruity acidity, nutty aroma, and distinct layer variations.
Huehuetenango is located along the Sierra de los Cuchumatanes mountain range, which contains the highest peak in Central America at 4,000 meters. Huehuetenango is one of the finest specialty coffee-producing regions in Central and South America, primarily due to its unique geographical environment: fertile soil, abundant rainfall, continuous high-altitude mountain areas (1,200-1,800 meters), steep slopes, and special valley terrain. Each block has unique and varied natural resources, creating microclimates, which is why coffees from different estates have vastly different and diverse flavors.
