Ethiopia's climate varies significantly due to differences in latitude and altitude. Although located in the tropics, temperatures vary across regions. Fertile red-brown soil with 1.5-meter-deep drainage provides excellent growing conditions. Regional microclimates and processing methods at each processing plant create distinctive differences and characteristics in the coffee produced.

Yirgacheffe - The Representative Work of Coffee's Birthplace, Ethiopia

A small town under the Sidamo province, a specialty producing area. Known for its unique fruit notes and sweet-tart sensation that captivates countless coffee enthusiasts.

On your coffee journey, if you haven't tried Yirgacheffe, you could say you haven't even started.

Ethiopia is the oldest coffee-producing country. You can cup Ethiopian beans and find all the flavor profiles of current coffee varieties. Ethiopia can be called the gene bank of coffee, the source of all flavors. The most abundant coffee in Ethiopia is naturally processed using ancient methods, shaped by Ethiopia's water-scarce geography. However, ancient natural processing is difficult to control, farmers' operational quality is poor, and unpleasant medicinal, onion, and fermented tofu flavors can occur. But when processed properly, explosive fruit notes and fermented wine-like aromas are absolutely captivating. Hell or heaven, determined in an instant.

In 1959, the Yirgacheffe region began experimenting with washed processing. After 1970, the jasmine floral notes and lemon-citrus flavors of washed Yirgacheffe became popular in Europe and America, becoming the model for African specialty beans. Natural processing gradually drifted away from Yirgacheffe. However, some people always missed the wonderful wine-like notes of natural processing. In 2006, improved natural processing made a major comeback. At the second "Gold Medal Cooperative Coffee Competition" held in Ethiopia, natural beans dominated the top three, decisively defeating washed Yirgacheffe.

Today, refined natural processing methods are increasingly mature. High standards eliminate defective coffee beans, reduce contamination sources, use raised drying beds with dedicated personnel for uniform drying. Rich strawberry, citrus, honey peach, jasmine floral notes, and elegant red wine characteristics have exploded in popularity ever since.
