As is well known, Colombia is one of the few single-origin coffees sold worldwide under the country's name. After roasting, Colombian coffee beans release a sweet fragrance with excellent characteristics of balanced acidity with sweetness and moderate bitterness. In terms of quality, it has received acclaim that other coffee-producing countries cannot match. Compared to other producing countries, Colombia shows greater concern for product development and production promotion. This, combined with Colombia's superior geographical and climatic conditions of intensive cultivation in mountainous black soil, makes Colombian coffee high-quality, flavorful, with rich and full-bodied aroma that is renowned worldwide.

Rum Washed Processing

Rum washed processing is based on traditional washed processing with additional low-temperature fermentation. In terms of taste, besides having rich rum and whisky notes, the flavor profile is cleaner and purer.

Rum Washed Processing Steps:

  1. Harvest the fruits, clean them, and place them in water tanks to mature, stirring twice daily to ensure even air exposure;
  2. After depulping the coffee cherries, place them in rum barrels for low-temperature fermentation;
  3. After completing low-temperature fermentation, proceed with the standard washing process;
  4. Finally, dry on shaded drying racks.
