FrontStreet Coffee - Brief Introduction to Pour-Over Coffee Steps
A perfect cup of pour-over coffee requires not only skilled brewing techniques but also delicate control of various factors, such as coffee variety, coffee bean amount, grind size, water temperature, water quality, water flow, extraction time, pouring methods and timing, and even the drinker's preferences. These adjustments allow the coffee to always present a perfect balance of sweetness, acidity, bitterness, richness, and aroma.
Step 1
Take out the beans. First, heat water. While heating the water, weigh out 15g of coffee beans and pour them into the grinder, but don't grind yet.
Step 2
Wet the filter paper. After the water boils, pour it into the pour-over kettle, wet the filter paper and filter cup to completely moisten the filter paper and make it stick closely to the filter cup wall. The purpose is to remove paper taste and increase the temperature of the filter cup and sharing pot. Use the pour-over kettle to heat the water to 88 to 94 degrees Celsius.
Step 3
Grind the coffee. Because grinding too early will cause aromatic substances in the coffee powder to volatilize in a short time.
Bloom. Pour the ground coffee powder into the coffee filter cup, gently tap it flat, and make a depression point in the center as the hot water injection point. Use a narrow-spout kettle to pour an appropriate amount of hot water into the depression point to fully bloom the coffee powder (about 20 seconds).
Step 4
Using the pour-over kettle, move back and forth in circles centered on the depression point, pouring water into the filter cup at a uniform speed, completing the pouring of 250g of water within about 60 to 90 seconds.
Step 5
After all the water has passed through the filter cup and coffee powder and dripped into the sharing pot, shake the coffee in the sharing pot evenly a few times to mix liquids of different concentrations and flavors from the lower and upper layers. A pot of aromatic pour-over coffee is then ready.
Coffee Flavor Adjustment
If you are not satisfied with the taste of the coffee, adjust according to the acidity and bitterness of the coffee. If the taste is too acidic, you can make the grind finer, increase the water temperature, or extend the extraction time. It is recommended to make only one adjustment at a time, so you can know the reason for the previous unsatisfactory coffee.
Knowledge Point
The selection of coffee powder roasted beans and the degree of roasting will affect the taste of pour-over coffee. You can choose medium roast or light roast according to personal preference.
