How to Brew Ground Coffee for Great Taste - Standard Pour-Over Coffee Steps

FrontStreet Coffee - Brief Introduction to Pour-Over Coffee Steps
Bean Preparation
First, prepare the amount of beans according to personal needs. Generally, the extraction ratio for pour-over coffee is 1:15, or it can depend on personal taste requirements - 1:10 or 1:13 are also acceptable. If diluted further, it becomes similar to black tea with aroma, but the coffee flavor will be somewhat lighter. I typically choose 30 grams of beans (if there's a scale among your tools, you can weigh the beans) to brew 450ml of coffee essence. Place the beans in the grinder - this counts as preliminary preparation work.
Water Heating
Generally, the water temperature for pour-over coffee should not exceed 90 degrees Celsius (personal experience). The higher the water temperature, the faster the extraction speed. Of course, some undesirable flavors may appear at high water temperatures, such as more pronounced bitterness. Generally, heating the water between 85-88 degrees Celsius is sufficient.
Tool Preparation
There are many types of filter cups for brewing coffee: fan-shaped, bowl-shaped, and conical filter cups. I generally choose to use the V60 conical filter cup. The advantage of using this type of filter cup is that the grounds can be extracted evenly, and the blooming phase will be relatively uniform, achieving the goal of complete extraction. For pour-over, you need to prepare a filter cup, pour-over kettle, serving pot, and filter paper. First, fold the edges of the filter paper, open it, and place it inside the filter cup. Then hold the filter paper with your hand and pour water from the pour-over kettle along the cup wall to moisten the filter paper, allowing it to adhere closely to the cup wall, achieving the effect of temperature uniformity and even laying in the cup. Then pour out the excess water from the serving pot.
Brewing Process
Grind the beans from the grinder and pour them into the filter paper in the filter cup. Gently tap the edge of the filter cup to evenly distribute the grounds in the filter cup. Then aim the spout of the pour-over kettle at the center of the grounds and pour evenly outward until the water completely soaks the grounds. Be careful to avoid pouring onto the adjacent filter paper. The ratio of brewing water to grounds should be approximately 2:1 - meaning if you have 30 grams of grounds, you should use about 60 grams of water. Let the water completely soak into the grounds, then lift the pour-over kettle and wait for 30 seconds or until the grounds bubble up and then collapse before proceeding to the second stage of pouring.
Second and Third Pour
The second pour ratio should be approximately four to five times the amount of grounds, meaning the water weight should be around 190 grams. Still pour evenly, being careful not to let the water exceed 5mm above the grounds level, which ensures full extraction while avoiding the flow of undesirable flavors. Then wait for the water to finish dripping before proceeding to the third pour. The third pour will be similar to the second pour, but the pouring speed should be faster than the second pour. When the water-to-grounds ratio reaches 1:15, stop pouring and separate the filter cup from the serving pot. The brewing is complete.
Tasting and Appreciation
Pour-over coffee generally favors medium to light roasted beans. After the coffee is brewed, it's recommended to shake it before dividing into cups to distribute the flavor evenly among each serving. Generally, before drinking, first smell the coffee's aroma - whether it's fruity or other fragrances. Then take a small sip, letting the coffee aroma seep through the gaps between your teeth, experiencing its sour, sweet, bitter, and astringent flavors. When I drink coffee, I generally experience its various stages - whether the beginning has pronounced bitterness, or if the entry is acidic or mellow, whether the middle stage begins to have layers, and whether the aftertaste brings sweetness or bitterness. The second sip can be taken in larger gulps. As for personal preferences, they can be achieved entirely through extraction methods.
