When we drink tea, we are actually drinking the flavor that comes from the variety, origin, and the joint creation of farmers and tea masters. Coffee is, of course, no different. As mentioned in our previous articles, when we drink lattes, Americanos, or espresso, what we are actually drinking is precisely the flavor that comes from the variety, origin, and farmers, which is bestowed upon the coffee beans.
These flavors are where the truly precious value lies. You should know that not all coffees can present elegant and comfortable malic acid, nor can all coffees give us pleasant nut, toffee, and chocolate flavors.
In addition to the beverages derived from espresso, do we have other ways to enjoy such precious products? Yes! And it's very simple! That's pour-over coffee!!
♢ How to Properly Taste a Cup of Pour-Over Coffee ♢
First, we must understand the basic tastes in coffee:
● Acidity: This is a must-have! Fruit acidity can make coffee lively, light, and rich. However, what we hope to taste is the fruit acidity of fruits like apples, lemons, and peaches. What we don't want is the sharp acidity of vinegar.
● Sweetness: The sweetness in coffee is not actually the sweetness of sugar, but a combination of caramel sweetness and caramel-like aroma.
● Bitterness: All coffees contain bitterness, but we don't want to taste too much of it (none is best). Bitterness increases with the degree of roasting. If you prefer lightly roasted coffee beans, we hope to taste a bitterness that "melts away," rather than flavors like "burnt," "charred," or "smoky."
● Aroma: This is the most precious and delicate treasure of coffee. If there are no recognizable, clear flavor characteristics, then there's no need to choose such coffee, because it would be no different from other coffees!
● Balance: For me, balance is very important. Balance can basically be said to be the synthesis of all feelings. There must be fruit acidity (but not too much, becoming sharp acidity), there must be sweetness, it cannot be too bitter, it should have a comfortable mouthfeel, and a pleasant aftertaste. In summary, the overall drinking experience should be pleasant.
♢ The Birth of a Cup of Pour-Over Coffee ♢
As mentioned in previous articles, the method for making pour-over coffee is very simple. Basically, follow a 1:15 coffee-to-water ratio, with water temperature ideally at 90-93°C. First rinse the filter paper, then distribute the coffee grounds, and finally brew, drip, and serve - controlling the total time within 2.5 minutes. The grinding scale is not mentioned here because there are differences in grinding coarseness between different brands of grinders, making it impossible to provide a uniform value.
So let's see how changes in various parameters affect the flavor of a cup of pour-over coffee:
As the grinding particles become finer, the bitterness, body, and stimulating sensation of the coffee will increase accordingly, which will also reduce the perception of acidity; the higher the water temperature, the higher the acidity, bitterness, body, and stimulating sensation; the brewing time has no significant effect on acidity, bitterness, and body, but the stimulating sensation will increase with time.
♢ How to Choose Pour-Over Equipment ♢
Choosing equipment is a very difficult task. Here is a combination that I personally believe offers high cost-effectiveness and is convenient to use, for reference only:
Stainless steel filter
Bleached filter paper
Glass pot
Temperature-controlled stainless steel pour-over kettle
Digital scale
Electric grinder
In the next few articles, I will lead you all to compare the differences between various equipment and why we choose such combinations.

A half-pound (227 grams) package costs an average of around 80-90 yuan. Calculated based on 15 grams of coffee per cup, one package can make 15 cups of coffee, with each cup costing only about 6 yuan. This is extremely cost-effective compared to the tens of yuan per cup price at coffee shops.
