First, we must understand the basic tastes in coffee:

● Acidity: This is a must-have! Fruit acidity can make coffee lively, light, and rich. However, what we hope to taste is the fruit acidity of fruits like apples, lemons, and peaches. What we don't want is the sharp acidity of vinegar.

● Sweetness: The sweetness in coffee is not actually the sweetness of sugar, but a combination of caramel sweetness and caramel-like aroma.

● Bitterness: All coffees contain bitterness, but we don't want to taste too much of it (none is best). Bitterness increases with the degree of roasting. If you prefer lightly roasted coffee beans, we hope to taste a bitterness that "melts away," rather than flavors like "burnt," "charred," or "smoky."

● Aroma: This is the most precious and delicate treasure of coffee. If there are no recognizable, clear flavor characteristics, then there's no need to choose such coffee, because it would be no different from other coffees!

There must be fruit acidity (but not too much, becoming sharp acidity), there must be sweetness, it cannot be too bitter, it should have a comfortable mouthfeel, and a pleasant aftertaste. In summary, the overall drinking experience should be pleasant.

As mentioned in previous articles, the method for making pour-over coffee is very simple. Basically, follow a 1:15 coffee-to-water ratio, with water temperature ideally at 90-93°C. First rinse the filter paper, then distribute the coffee grounds, and finally brew, drip, and serve - controlling the total time within 2.5 minutes. The grinding scale is not mentioned here because there are differences in grinding coarseness between different brands of grinders, making it impossible to provide a uniform value.

So let's see how changes in various parameters affect the flavor of a cup of pour-over coffee:

As the grinding particles become finer, the bitterness, body, and stimulating sensation of the coffee will increase accordingly, which will also reduce the perception of acidity; the higher the water temperature, the higher the acidity, bitterness, body, and stimulating sensation; the brewing time has no significant effect on acidity, bitterness, and body, but the stimulating sensation will increase with time.
