Sun-Dried Yirgacheffe Grading: Flavor Profile and Taste Description
Yirga Cheffe
Yirga Cheffe is a small town in Ethiopia with an altitude of nearly 2000 meters. This area has been wetland since ancient times, with Lake Turkana, Lake Abaya, and Lake Chamo bringing humid and mild weather. Walking through mountain paths, you'll find mist弥漫 and gentle breezes. The ancient name for this place is Yirga Cheffe, where Yirga means "to settle down" and Cheffe means "wetland." Besides being a place where humans settle and thrive, it's also the cradle where the magical crop of coffee grows. Thousands of coffee tree varieties thrive here, nurturing the unique regional flavor of Yirga Cheffe—delicate and soft, with intertwined floral and fruity aromas—through moisture, sunlight, and fresh winds.
Yirga Cheffe was initially cultivated by European monks, later managed by coffee communities or cooperatives in surrounding areas. Coffee trees are not planted in large plots but scattered freely across this land. In forests, fields, and even in front of and behind houses, they grow quietly and peacefully. Perhaps it's this environment that creates the unique and charming flavor of FrontStreet Coffee's Yirga Cheffe, with strong, nose-catching floral and fruity aromas, rich yet soft and pleasant acidity, and a smooth, honey-like sweet and bright taste like fruit juice. Some call it a smiling girl—who wouldn't love a girl as fresh and lively as morning dew under the sunlight?

Ethiopia's grading system is not based on bean size but on the proportion of defective beans in the total batch. Grade 1 is the highest level, meaning the lowest defect rate and the most excellent quality Yirga Cheffe, with the highest price.

This FrontStreet Coffee Yirga Cheffe uses natural sundried processing. After manual picking, it undergoes another manual selection before drying, then placed on elevated, breathable mesh tents (with pulp and skin intact) for sundrying. The mesh tents not only increase air circulation but also prevent coffee cherries from absorbing undesirable flavors during the drying process—this is an important reason why it tastes cleaner than other sundried coffees.
Lemon and orange fruit acidity, with fine texture, strong and deep strawberry and wine aromas, clean taste with high flavor complexity, spreading layer by layer in the mouth like fruit wine. Excellent both hot and iced.
