1. Pouring Direction: When pouring water with a pour-over kettle, you must control the pouring direction. Don't pour continuously at the same point. 2. Pour Stability: When brewing coffee with a pour-over kettle, pay attention to the stability of the water flow. Pour-over coffee utilizes the impact force of the water stream to achieve extraction. Inconsistent water flow will affect the balance of extraction, while suddenly interrupted streams will cause coffee grounds to settle at the bottom of the filter, creating water retention and extending extraction time. 3. Interrupting the Pour: Another technique when brewing coffee with a pour-over kettle is called "interrupting the pour," which means stopping the pouring process. This action prevents the pour-over coffee from becoming too strong or too weak. For example, when brewing 360cc of water, you can interrupt at halfway (180cc), wait until the water level on the coffee grounds drops, then continue pouring. This can adjust the flavor of the pour-over coffee, making it richer. Additionally, when the water stream is too large, you should also interrupt to avoid making the coffee taste too weak. Interrupting the pour can change the taste of pour-over coffee and adjust the extraction rhythm. It's recommended to do this one to two times.
