More and more people, after learning about pour-over coffee, have begun to fall madly in love with the various coffee flavors that pour-over brings: clean, bright, uplifting, with memorable aftertaste. All the sweet and sour notes are a delight to savor. This batch of Panama Geisha has been tested through pour-over many times, and we've finally summarized some brewing parameters that everyone might find useful. You can learn from these to avoid some detours.
Coffee Details
Variety: PANAMA.GEISHA (ninety plus)
Processing Method: WASHED
Altitude: 1450-1800M
Roast Level: Light roast
Flavor Notes: Orange candy, red berries, lemon soda, citrus, Geisha flowers, lychee sweetness, Earl Grey tea
Brewing Parameters
Grinder: Little Flying Eagle 3.5
Dripper: HARIO V60
Pour-over Kettle: BONAVITA
Water Temperature: 91°C
Water-to-Coffee Ratio: 14:1
Previously, we did three tests: first brew at 93°C with 12:1 ratio, second brew at 90°C with 14:1 ratio, and third brew at 88°C with 14:1 ratio. The results showed that the third brew currently works best, with balanced sweet and sour notes upon entry. High-temperature extraction tends to be slightly more acidic. For friends who don't prefer sour flavors, we recommend trying extraction at 88°C. If conditions allow, you can also try SOE (Single Origin Espresso), which is equally excellent.
Geisha, with its beautiful fusion of floral and fruity aromas, can also encompass the pure flavors of Mandheling, along with rich berry notes and the creamy texture of Yirgacheffe. Geisha is more like a fruit tea with coffee flavors, featuring rich aromatic layers and a sweet aftertaste. The lower the temperature, the more delicate its acidity becomes.
The wet aroma is accompanied by hazelnut fragrance. The initial taste appears gentle and reserved. As it cools slightly, the floral and fruit notes gradually rise with the decreasing temperature. The cold aroma is exceptionally outstanding, leaving more surprises for you to discover slowly!
