The geographical location of Sidamo is Ethiopia's southernmost coffee-growing region, with elevations ranging from 4,600 to 7,200 feet, bordering Kenya.

In Sidamo's sun-drying fields, coffee is placed in wooden frames with hemp nets. Workers manually stir the coffee under sunlight exposure. Sun-dried Sidamo is typically exported as G4 grade, while washed Sidamo, due to its more refined processing, is mostly exported as G2 grade.

Sidamo coffee flavors are incredibly diverse. Different soil types, microclimates, and countless native coffee varieties, combined with towering mountains, highlands, plateaus, valleys, and plains create diverse topography. The region's geology consists of fertile, well-drained volcanic soil, with soil depths reaching nearly two meters, and topsoil appearing dark brown or brown.

The region's greatest advantage is that soil fertility is maintained through the recycling of organic matter, using fallen leaves from surrounding trees and plant residues as fertilizer. This has resulted in distinct differences and characteristics in coffee produced by different towns.

From 2010 to 2012, it continuously achieved high scores of 92-94 on the authoritative American coffee evaluation website CR, demonstrating the exceptional quality of green beans from this region.

Sidamo green coffee beans are slightly grayish, with some areas appearing coarse and others fine. They possess both gentle and bright acidity, appropriate body thickness, sweet and spicy flavors, making them one of the garden coffees from Ethiopia's southern highlands. Unlike typical African coffees, Sidamo has clear fruit acidity, smooth mouthfeel, and delicate floral and herbal aromas.

Sun-dried Sidamo offers flavors close to floral notes with slight earthy undertones. Washed Sidamo carries nutty fruit aromas with subtle cocoa notes. Both share a smooth mouthfeel and viscosity, pleasant acidity, and aroma. Light to medium roasts are suitable for single-origin brewing, while medium to dark roasts work well for blended coffee and as a good Espresso base.
