Sun-dried flavor is obtained during the sun-drying process. In the transformation from coffee cherries to green coffee beans, two different methods are commonly used: washed and sun-dried. Because the sun-drying method involves leaving coffee cherries to dry in the sun, the beans retain a more complete natural mellow flavor and develop a mysterious special aroma from fermentation. This special aroma is what sophisticated palates refer to as "sun-dried flavor" - something that requires careful appreciation!
