The fascinating aspect of pour-over coffee is that even with the same coffee beans and the same brewing equipment, different people will produce different flavors. Many factors affect the taste of a filter paper drip pour-over coffee, such as water temperature, extraction time, water flow control, and even the timing of pouring water.
So how exactly should one control these factors to brew a delicious cup of coffee? For filter paper drip brewing, as long as you achieve the following three points, your coffee won't taste too bad. 1. Pour hot water onto the center area of the coffee grounds, avoiding the outer edges. 2. The water flow must be fine and slow to ensure full coffee extraction. 3. When pouring water, create a Japanese "の" (no) character pattern over the coffee grounds. However, if your pursuit goes beyond this, there are additional details that vary depending on different coffee equipment.
Today, let's use the V60 as an example for explanation, so you can brew coffee anytime at home.
Brewing Steps
① Properly place the filter paper into the drip cup, pour coffee grounds into its center, and gently shake to level the surface.
② Using a special narrow-spout kettle, carefully pour hot water around 92°C over the coffee grounds, ensuring the water moistens the entire coffee bed. Freshly ground coffee may expand or produce bubbles at this point. Let it rest and steam for 20-30 seconds.
③ After steaming, slowly and meticulously pour hot water into the circular area about 3cm in diameter at the center of the expanded coffee grounds. The water flow rate should be controlled to match the coffee dripping speed at this moment.
④ Before the expanded grounds begin to collapse, pour water again. Avoid pouring at a single point; continuously change the position of water flow through the coffee grounds to ensure all coffee grounds are fully extracted.
The extraction time should not exceed 2:30. If it exceeds this extraction time, it will lead to over-extraction, and the coffee's flavor will become bitter and astringent.
