FrontStreet Coffee - Yunnan Coffee Varieties Introduction
The coffee grown in Yunnan is of the Arabica species, characterized by its rich and delicate flavor, aromatic fragrance, high acidity, smooth texture, and minimal bitterness. Under Yunnan's unique geographical location and climatic conditions, Yunnan coffee possesses a distinctive flavor profile of "strong but not bitter, fragrant but not intense, with a hint of fruitiness." After inspecting Yunnan's coffee cultivation and primary processing bases, tasting experts from the International Coffee Organization evaluated Yunnan coffee as being in the same category as Colombian wet-processed small-bean coffee - among the highest quality coffees in the world.
The classic premium coffee varieties Typica and Bourbon are the main cultivated varieties in Yunnan. In 1991, Yunnan also introduced the Catimor series from Kenya. This variety has stronger virus resistance and higher yields. Currently, the Catimor series is most widely planted in Yunnan, with small amounts of Typica and Bourbon still cultivated in the Baoshan region.
Catimor is a small-bean coffee variety belonging to the Catimor high-generation series. Catimor is not of pure Arabica lineage - it is a hybrid between the Timor variety (which belongs to the Robusta species) and Caturra (a variant of Bourbon), so Catimor has 25% Robusta heritage.
Yunnan is China's main coffee bean producing region. Located south of the Tropic of Cancer, Yunnan belongs to the subtropical mountainous climate zone, featuring unique plateau red soil that is fertile and loose, with a mild climate particularly suitable for growing small-bean coffee. Today, let's explore the characteristics and flavor profile of Yunnan Catimor beans together.
Catimor, also known as Catmor, was cultivated by the Portuguese in 1959. It possesses three-quarters Arabica heritage and one-quarter Robusta heritage. Its greatest characteristics are extreme vigor, strong disease resistance (resistant to coffee borer and leaf rust), and heat tolerance.
For coffee producers, it is a relatively ideal commercial variety in terms of yield, maturity, pest and disease resistance, and flavor. In the past, some people believed that the "inferior roots" of Catimor's lineage determined that it could never become a specialty-grade coffee of significant distinction.
However, today's prevailing view is that so-called specialty coffee is more closely related to the scientific handling of production, harvesting, processing, and preparation stages. Guided by this philosophy, an increasing number of clean, flaw-free, high-sweetness specialty-grade Yunnan Catimor coffees have indeed emerged, delighting coffee enthusiasts.
