Freshly roasted coffee beans are too delicate or described as having "roastiness," requiring time to reach their most perfect and balanced stage!

After roasting, coffee beans generate large amounts of carbon dioxide and other gases internally. These gases affect the contact between coffee grounds and water during brewing, leading to uneven extraction of flavor and aroma compounds! In addition to indicating the roasting time, it's better to also specify the optimal resting time. However, the carbon dioxide in coffee beans isn't entirely bad—it forms a protective layer inside and outside the beans, isolating them from oxygen, slowing oxidation, and maintaining the freshness of the coffee beans.

Freshly roasted coffee beans initially have only aroma with a slightly acidic taste. Over time, the acidity gradually diminishes, and the mouthfeel becomes fuller. During the resting period, the flavor reaches its peak—both aromatic and mellow with rich taste characteristics. Afterward, bitterness gradually increases while aromas begin to dissipate. Therefore, waiting several days after roasting before brewing coffee is a good practice. Coffee resting must be done in packaging with one-way degassing valves; sealed packaging prevents carbon dioxide from escaping, causing the coffee to still taste harsh during the resting period.

There isn't actually a specific timeline for coffee resting because too many factors can affect coffee beans, such as: degree of roast, storage method, environment, and so on.

Here are specific recommendations for coffee bean resting times, categorized by roast degree, for everyone and coffee shops to reference!

Very Light Roast: Approximately 4 days
Light Roast: Approximately 3 days
Medium Roast: Approximately 2 days
Medium-Dark Roast: Not necessary
Dark Roast: Not necessary

However, for home consumers, the flavor of freshly roasted beans begins to decline after one month. If there are few defective beans and the roasting uniformity is high, the harshness will likely dissipate in about two days, and the coffee will be ready to drink starting from the third day.

Flavor Period (also called Taste Window)
This is the optimal period for tasting coffee flavors after roasting. Freshly roasted coffee undergoes a self-fermentation process within a week, making the flavors more perfect. After this stage, oxidation and volatilization begin, and the wonderful coffee flavors gradually fade away. Therefore, the best flavor period for coffee is within two weeks after roasting. At this time, the coffee will have very fresh aromas, abundant oils, and sweet coffees will have noticeable aftertaste. After hot water infusion, the coffee grounds expand significantly in volume—this is often a simple method to identify if coffee is freshly roasted.

Extensive practical experience has proven that the flavor period of roasted coffee beans is basically within one month, and when properly sealed, it won't exceed two months at most. After coffee is ground into powder, the surface area increases, accelerating oxidation and volatilization, thus shortening the flavor period. Regardless of the coffee brand, once past its flavor period, it cannot be considered good coffee—"freshness" is the prerequisite for good coffee.
