Colombia's Finca San Jose Estate has been actively seeking breakthroughs to forge its own unique path amidst the prevailing trend of specialty coffee in recent years.
One day, while accompanying her husband (who manufactures rum oak barrels and produces rum) as he filled rum distillate for fermentation, the estate's owner Monsalve Botero had a sudden inspiration: what if raw coffee beans were placed in oak barrels for fermentation? Could this create different flavors? For this reason, starting from 2013, Monsalve Botero began experimenting with different-aged Colombian oak barrels for varying fermentation times using winemaking-style low-temperature fermentation. Finally, in this year's batch, she found the desired flavor, creating a refined washed coffee—rum barrel fermented beans—that differs from traditional washed processing.

Cultivar: Castillo, Naranjal (Naranjal is a Castillo variety. Colombia has developed different Castillo varieties adapted to different regions, so different Castillos vary slightly. Naranjal was specifically developed for the Caldas region.)
Flavor Description: Cupping reveals notes of whiskey, chocolate liqueur, and honeydew melon. Strong flavor characteristics, intoxicating wine aroma, excellent structure, clean, high sweetness, with an overall sweet and delicious profile.
Knowledge Point: Colombian coffee is one of the few single-origin coffees sold worldwide that bears a country name.
