Colombia is well-known as one of the few single-origin coffees sold worldwide under its country name. After roasting, Colombian coffee beans release a sweet fragrance with excellent characteristics of sweetness within acidity and balanced bitterness. In terms of quality, it has received praise unattainable by coffees from other countries. Compared to other producing nations, Colombia pays more attention to product development and production promotion. This, combined with Colombia's superior geographical and climatic conditions for intensive cultivation in mountainous black soil, makes Colombian coffee high-quality, flavorful, with rich and thick aroma, renowned worldwide.

Rum wine wash processing, like the special processing method of rum aroma, is a low-temperature fermentation treatment based on the washing process. In terms of taste, besides the rich rum and whisky flavors, the flavor profile is cleaner and purer.
Rum Wine Processing Steps:
- Harvest fruits, clean them, and place them in a water tank to mature, stirring twice a day to ensure even air exposure;
- After coffee cherries are depulped, place them in rum barrels for low-temperature fermentation;
- After completing low-temperature fermentation, proceed with the regular washing process;
- Finally, dry them on shaded drying racks;
Special Attention:
- The material of the rum barrels must be made of oak, because the wood baking process causes chemical changes in oak, producing an oak flavor that is intoxicating. Only by placing green coffee beans in them for fermentation can this unique rum aroma be imparted to the coffee beans.
