FrontStreet Coffee - Colombian El Plan Estate Dry Fermentation Washed Specialty Coffee Introduction
Colombia is located in the Andes Mountains, where the climate is mild, the air is humid, and there is good rainfall, making it very suitable for coffee cultivation. According to geographical location, it is divided into three producing regions: northern, central, and southern. Among these, Colombia has six high-quality origin coffee producing regions: Sierra Nevada, Santander, Cauca, Huila, Narino, and Paisaje cultural cafetero.
Narino Province (NARINO)
Capital: Pasto; Several of the best varieties grow in this area, and their quality is surprisingly impressive. However, growing coffee in this high-altitude mountainous region presents great challenges. The proximity to the equator's latitude and the warm, humid air currents from the Pacific ensure the growth of coffee trees. This region is characterized by typical smallholder farming, with over 40,000 coffee growers producing extremely high-quality coffee beans, of which 17% are Castillo variety.
In 2016, Colombia withdrew from the Cup of Excellence (COE) for the first time and held the nationwide Land of Diversity green bean competition in the same year.
Judges evaluate the quality of a coffee from five aspects: acidity, clean cup, body, balance, and exotic flavor characteristics. Under such rigorous evaluation, only the top five scores from each group qualify for live auction at Land of Diversity.
The creation of this competition not only showcases Colombian coffee's characteristics of balanced flavor and diverse styles to the world but also encourages more coffee farmers to engage in coffee bean cultivation through the fairest method—post-competition auctions.
This batch of Colombian auction coffee from S.Engine was acquired by friends from long-term green bean partner Latorre Dutch at the first Land of Diversity auction, securing the entire batch. More importantly, unlike traditional Colombian washed coffee flavor characteristics, this batch from El Plan processing station uses dry fermentation (without wet fermentation in water tanks) followed by natural sun-drying processing for the washed Castillo variety. In addition to preserving the sweet acidity of Colombian washed coffee, the acidity is more gentle, and the coffee overall carries a hint of tropical fermented body, with light yet complex and smooth sweet and sour flavors.
