Sidra Variety Characteristics

Sidra was first discovered in Ecuador and is a descendant of Typica and Bourbon. The Sidra variety has high requirements for its growing environment, which means its yield is scarce. However, when it successfully bears fruit, it can present a wonderful cup experience. Bourbon Sidra is a grafted variety of Bourbon and Typica. Because it's grafted with Typica, it has strong floral aromas and a rich mouthfeel, while also retaining the sweetness of Bourbon, making the overall flavor very pleasant.

Honey Process Details

The mucilage layer is the part of the coffee fruit with the highest sugar content and an important component of coffee processing fermentation. It can be said that this part determines 80% of the nutrient supply during the processing. Yellow honey retains 60% of the mucilage, red honey retains 75% of the mucilage, and black honey removes almost no mucilage.

The more coffee mucilage retained, the higher the sugar content, the more complex the flavor, and the greater the sweetness. The advantage of honey processing is that it best preserves the original sweet flavor of ripe coffee fruits, giving the coffee a delicate brown sugar flavor and stone fruit sweetness, while the berry flavors also support a red wine-based aroma, making it considered a very elegant product.

Yellow Honey Process

Yellow honey: retains about 60% of the mucilage; the drying method requires the most direct heat absorption, receiving the most sunlight for drying, taking about 8 days to reach stable moisture content.

Knowledge Point: Red Honey Process

Red honey: retains about 75% of the mucilage; compared to yellow honey, the drying time is longer, and it reduces the time of direct sun exposure, even using shade nets, lasting about 12 days.
