FrontStreet Coffee - Introduction to Jamaica Blue Mountain Coffee and Coffee Bean Aging Period
The delicate fragrance and sweet flavor of Jamaica Blue Mountain, with a taste as mellow as fine wine, has always been the favorite of Japanese coffee connoisseurs. Its scarce production makes it representative of specialty coffee. However, not all coffee produced in Jamaica can bear the Blue Mountain label. In 1953, the Jamaican government established the Coffee Industry Board (CIB) to promote the improvement of Jamaican coffee quality. Jamaica was the first country to register coffee producing regions as trademarks. All exports from Jamaica must be certified by the CIB, and only coffee from specific Blue Mountain administrative regions and at certain altitudes can obtain Blue Mountain certification.
Since 1790 (mid-18th century), Clifton Mount Estate began growing Blue Mountain coffee, all of which are Typica varieties. It is the highest altitude and oldest coffee estate in the entire Blue Mountain region, as well as the only single-estate Blue Mountain coffee with Rainforest Alliance certification. Sufficient altitude, gentle afternoon clouds and mist surrounding the mountain forests for shade, abundant sunlight, and mineral-rich planting soil provide excellent growing conditions for coffee trees.
Due to Japan's continuous investment in the Jamaican coffee industry, most Blue Mountain coffee is now controlled by Japanese interests, who also have priority purchasing rights for Blue Mountain coffee. In 1992, Jamaica sold 688 tons of Blue Mountain coffee to Japan, 75 tons to the United States, and 59 tons to the United Kingdom. Today, 90% of Blue Mountain coffee is purchased by the Japanese. Since the rest of the world can only obtain 10% of Blue Mountain coffee, regardless of price, Blue Mountain coffee is always in short supply. A pound of genuine Blue Mountain coffee costs over a thousand yuan, making it a true "king of coffees."
Coffee Bean Aging Period
Coffee beans are like living beings - just as humans age through cellular oxidation caused by oxygen intake, freshly roasted coffee is still too tender and has not reached its most mature stage. Like people, coffee beans need time to develop and mature. Simply put, bean aging is a process of "gas release," commonly known as bean awakening, aging, or maturation.
Freshly roasted coffee beans contain approximately 2% carbon dioxide by weight. This large amount of carbon dioxide is released depending on storage conditions, equipment, or methods, causing the pressure inside packaging to exceed atmospheric pressure. This pressure helps aromatic compounds and oils to blend, allowing all aromatic substances within the coffee beans to reach a state where they can be easily extracted.

In 1950, the Jamaican government established the Jamaican Coffee Industry Board to set quality standards for Jamaican coffee and supervise their implementation. It issues special official seals for exported raw and roasted coffee and is the world's highest-level national coffee institution.
