In 2017, DW, a green coffee bean company from Ethiopia, sent their coffee beans to the Taste Of Harvest (TOH) competition hosted by the African Coffee Association. The sun-dried batch won the championship in Ethiopia's TOH competition. This batch of green beans, in its capacity as champion, was named "Hua Kui."

Ethiopian coffee enjoys a high reputation domestically, especially among Chinese people who have a particular interest and love for Ethiopia's Sidamo and Yirgacheffe growing regions. The Sidama province is located in southern Ethiopia, with the Arsi province to the north, extending eastward to connect with the Bale province, and bordering the Gamu Gofa provincial administrative region to the west.

Ethiopia's administrative divisions are organized into four levels, ordered from largest to smallest: Region, Zone, woreda, and kebele. Most coffee bean names follow this naming convention. For example, Hua Kui is located southeast of Yirgacheffe in the Sidamo region, and administratively belongs to Oromia Region → Guji Zone → Shakisso woreda → Hambella.

Hua Kui is located in Hambella, which is part of Ethiopia's largest coffee growing region, Guji (GUJI), and administratively belongs to the Oromia Regional State. Hambella is separated from Yirgacheffe's Kochore by mountains to the west, and borders Guji's sub-regions of Shakiso, Uraga, and Kercha to the southeast, east, and north respectively. It is Ethiopia's highest altitude coffee sub-region (Harrar is Ethiopia's highest altitude main coffee region).

Natural Sun-drying Process (African Drying Beds)

Coffee cherries are directly spread on concrete ground or drying racks for sun-drying, with the purpose of making the coffee dry and easy to store. The drying time typically ranges from 2-4 weeks, depending on weather conditions.

Typically, coffee intended for commercial use is dried on concrete ground, requiring constant and timely turning of the coffee cherries to ensure even heating on all sides, which facilitates drying and prevents mold growth from prolonged contact with the ground.

Hand-picked cherries and those used for specialty coffee are processed using African Beds for sun-drying. The coffee cherries are spread on breathable, mesh-like beds to enjoy sun exposure, with the thickness of the spread varying according to local conditions.

[Sun-dried Hua Kui Green Beans]: The beans are relatively smaller, yellowish-green, with significant variation in size.

[Sun-dried Hua Kui Roasted Beans]: Lightly roasted with a lighter color and no silver skin.
