Honduras is currently the largest coffee producing country in Central America, but its coffee industry development started much later than neighboring countries. In the 1800s, as the country's basic infrastructure began to develop, it drove the growth of the coffee industry. In 1970, the government established the official institution IHCAFE, dedicated to improving coffee quality and setting up coffee laboratories in the six defined production regions to assist coffee producers.
Although Honduras has suitable land for coffee cultivation, the extremely high rainfall makes the drying process very difficult. The combination of sun-drying and mechanical methods results in unstable flavors. Even after drying, the hot climate still prevents coffee beans from being stored for long periods, becoming a major challenge to be solved in Honduras.
Honduras has three main producing regions, whose output exceeds half of the country's total coffee value. First is Montecillos: the highest altitude region, where coffee produced has bright flavors, rich layers, and citrus aromas. Second is Copán: Copán beans have chocolate flavors, full-bodied taste, and high sweetness. Third is Agalta: coffee beans from this region have tropical fruit aromas, sweeter taste, balanced acidity, and chocolate notes. Marcala: The Premier Coffee Region
Located in the southwestern mountainous area, Marcala is Honduras's most important coffee production area. The overall coffee quality is the best, far surpassing other coffee producing areas in Honduras. Coffee farms are all guided by the Fair Trade Association (FT). Most coffee farms are located between 1500-1800 meters above sea level. Coffee is grown organically using natural compost and natural methods to prevent pests and diseases. Furthermore, it is stipulated that both members who join and green bean purchasers must comply with the founding principles of the Fair Trade Association - enabling coffee farmers to have better income through fair trade, improving household income while also improving the overall community's education and living environment.
