Guatemalan Coffee - Guava Plain Estate Wine Aroma Natural Process

In the Guava Plain Estate of Guatemala's New Oriente region, the New Oriente region, as its name suggests, is located in the easternmost part of Guatemala.

Guava Wine Aroma Natural Flavor Profile:

Pineapple, cantaloupe, dried apricot, candied lemon peel, Bordeaux wine, green tea and cinnamon spices, overall rich in sweet flavors and full aroma of smoked dried plums.

Guatemalan Coffee's Guava Plain is named after the large number of guava trees planted locally. The estate owner is Mr. Benjamín Donado. The Donado family has been dedicated to coffee production since 1990, for over 20 years to this day. Before this, local farmers were quite unfamiliar with coffee production, and it was difficult to imagine planting coffee trees in such steep and high-altitude environments. However, it has now been proven that Benjamin made the correct choice back then, specializing in producing high-quality specialty coffee beans of different varieties and processing methods.

In the early days of Guatemala's New Oriente region, berry buyers would regularly come to purchase coffee cherries from farmers, then resell them to larger intermediaries, who would then resell to the town of Esquipulas. There, they would be mixed with other batches into large quantities of SHB (Strictly Hard Bean) with untraceable origins, and finally sold worldwide under the name New Oriente. In light of this, more and more international green coffee traders are working hard to change this situation. They work together with local partners to produce excellent flavored and traceable green coffee beans, breaking the traditional vicious cycle. Guava Plain Estate is one of the important members among them.

Adjustments have been made to harvesting standards and natural processing methods, such as turning and drying days. The rich fermentation aroma of the coffee berries is intense and bold, and the sweet fragrance of tropical fruits is quite charming.

How to Brew Guatemalan Coffee [Guava Plain Estate Wine Aroma Natural SL28] Well?

FrontStreet Coffee Pour-Over Reference:

Weigh 15g of [Guava Plain Estate Wine Aroma Natural SL28] coffee powder, pour it into a grinder for medium grinding. The ground particles should be slightly coarser than table salt. We use BG grinder setting 5R (standard sieve pass rate 60%), water temperature 89°C, V60 dripper for extraction.

The hot water in the pour-over kettle draws circles clockwise with the filter center as the focal point. Start timing when brewing begins. Within 15 seconds, brew the coffee to 30g, then stop pouring water. When the time reaches 1 minute, pour water for the second time. The second pouring is the same as before, drawing circles clockwise with the filter center as the focal point. The water flow should not hit the area where the coffee powder connects with the filter paper to avoid channel effects.

When brewing the coffee powder to the outermost circle, leave one circle, then brew circle by circle toward the center. At 2 minutes and 20 seconds, brew the coffee to 220g. The coffee brewing is complete.

Japanese Style Ice Pour-Over [Guava Plain Estate Wine Aroma Natural SL28]

Guatemalan Coffee [Guava Plain Estate Wine Aroma Natural SL28], light-medium roast, BG grinder setting 5M (standard sieve pass rate 67%)

20 grams of powder, 150 grams of ice, 150 grams of hot water. The water temperature should be 1°C higher than the normal pour-over recommendation of 90°C. Normal grinding is Komatsu Fuji 3.5 setting, while ice pour-over uses slightly finer by half a setting - Komatsu Fuji 3 setting.

Bloom water amount 40 grams, bloom time 30 seconds.

Segmented pouring, first segment 60 grams of water, second segment 40 grams of water. Use a relatively thin but high water column for pouring, stirring forcefully to make the coffee powder roll fully, but be careful not to let the liquid level get too high and avoid hitting the edge filter paper.

The entire extraction time is also about 2 and a half minutes (similar to the normal extraction time for 20 grams of powder).
