Olive Tree Farm, El Salvador Coffee Estate (KENYA SL28)
Olive Tree Farm began cultivating coffee in 1930, located in the Santa Ana volcanic region of El Salvador.
Olive Tree Farm is situated around El Salvador's famous "LOS VOLCANES" (Volcanoes) National Park. Rare volcanic flowers grow around the farm, along with wild wildlife from the national park such as deer, raccoons, and wild boars, creating an interesting ecological chain.
Since the farm is located on a volcano, it boasts extremely fertile volcanic terrain. In 2006, the Ilamapepec volcano erupted, and volcanic ash directly covered the farm. Although the coffee plantation was damaged at that time, a few years later, the fertile volcanic soil coverage created an even more nutritious growing environment for the farm.
Olive Tree Farm is cultivated using El Salvador's century-old traditional methods. Local Ingas trees, pomelo trees, and olive trees are used as shade trees, with over 75 tree species interplanted to form a natural forest interspersed with coffee trees. This combination with the volcanic soil nourishment creates this beautiful coffee plantation.
SL28 is a Kenya variety that the farm obtained seeds from friends with difficulty and planted in the coffee farm. In the volcanic soil at an altitude of 1800-1950m, unlike the wild tones from Africa, when grown in El Salvador, it exhibits gentle tropical fruits like peach, sweet citrus, white peach, passion fruit, and sweet orange, combined with almond tea, infused with fruit tea flavors, and a soft sweet aftertaste. It is a coffee that is both gentle and unrestrained.

How to Brew El Salvador Coffee [Olive Tree Farm Kenya SL28] Well?
FrontStreet Coffee's pour-over recommendation: Weigh 15g of [Olive Tree Farm Kenya SL28] coffee powder, pour it into a grinder for medium grinding. The ground particles should be slightly coarser than table salt. We use BG grinder setting 5R (standard sieve pass rate 60%), water temperature 89°C, and V60 filter cup for extraction.
Use the hot water in the pour-over kettle to draw circles clockwise around the center of the filter cup. Start timing when brewing begins. In 15 seconds, brew the coffee to 30g, then stop pouring water. When the time reaches 1 minute, pour water for the second time. For the second pour, same as before, draw circles clockwise around the center of the filter cup. The water flow should not hit the area where coffee powder meets the filter paper to avoid channel effects.
When brewing to the outermost circle of coffee powder, leave one circle and then brew circle by circle toward the center. At 2 minutes and 20 seconds, brew the coffee to 220g. The coffee brewing is complete.
Japanese-Style Ice Pour-Over [Olive Tree Farm Kenya SL28]
FrontStreet Coffee's ice pour-over [Olive Tree Farm Kenya SL28] recommendation:
El Salvador coffee [Olive Tree Farm Kenya SL28], medium roast, BG grinder setting 5M (standard sieve pass rate 67%)
20g powder, 150g ice cubes, 150g hot water. The water temperature should be 1°C higher than the normal pour-over recommendation of 90°C. Normal grinding uses small Fuji setting 3.5, while ice pour-over uses slightly finer - small Fuji setting 3.
Bloom with 40g water for 30 seconds.
Pour water in segments: first segment 60g water, second segment 40g water. Use a relatively fine but high water column for pouring, with forceful stirring impact to make the coffee powder fully tumble. However, be careful that the liquid level should not be too high and should not hit the filter paper at the edge.
The entire extraction time is approximately 2.5 minutes (similar to the normal extraction time for 20g powder).
