In terms of both production volume and quality ratings, Guatemala is undoubtedly one of the most important coffee-producing countries in Central America. Currently, the country's coffee producing regions are distributed across eight major areas: Antigua, Acatenango, Atitlán, San Marcos, New Oriente, Cobán, Fraijanes, and Huehuetenango. Among these, five regions belong to volcanic geology, while the other three regions are non-volcanic geology.

New Oriente is a relatively newly developed region among Guatemala's eight coffee-producing areas. The geology is volcanic, with soil composed of metamorphic rocks evenly mixed with minerals. The climate is characterized by clouds and abundant rainfall. Most coffee produced in this region comes from small family-owned estates. In recent years, its reputation has grown significantly, and market demand has increased substantially. As a result, farms in the area that originally cultivated other crops have been transitioning to coffee cultivation to increase family income.

This bean from New Oriente's Calderas Estate is of the Pink Bourbon variety, which is a mutation of the Bourbon variety.

Guatemala Coffee Region Introduction:

New Oriente is one of the more recently developed regions among Guatemala's eight coffee-producing areas. The region has a tropical climate with volcanic geology, and the soil consists of metamorphic rocks with evenly mixed minerals.

Due to its proximity to rocky areas, the soil is nutrient-rich with abundant mineral content. The ecosystem is active, with colorful flowers and diverse bird species, creating a rich and varied natural landscape.

The rainfall is quite plentiful, resulting in coffee with excellent acidity and aroma!

Pour-over Reference

Using a V60 dripper, 16g of coffee grounds to 32g of water, blooming for 30 seconds. Extract with water at 89-90°C temperature. Ratio 1:14. Medium-fine grind with Fuji grinder setting 4. For the second pour, add water until reaching 140ml, then pause. Wait for the water level to drop before slowly continuing the pour. Maintain even speed, keeping the water level from getting too high. Continue pouring until reaching 220ml, then stop. Extraction time: 2:15 seconds. This brings out a unique smoky mouthfeel and chocolate flavor. You can make fine adjustments according to your taste preferences.
