Guatemala has seven main coffee-producing regions: Antigua, Cobán, San Marcos, Atitlán, Huehuetenango, Fraijanes Plateau, and New Oriente.

The coffee bean we're featuring today comes from the San Sebastian Estate in San Miguel Dueñas, Antigua. Established in 1890, it is now managed by the fourth generation of the family. Throughout its century of operation, both in equipment and processing methods, it has been a model of excellence in Guatemala. The estate won first place in Guatemala's first agricultural competition in 1900, secured second place at the Guatemala National Exposition in September 1904, and claimed the championship at the same competition the following year. In 1942, the Guatemalan government honored it with the prestigious Quality Assurance Processing Plant designation. In 1968, Anacafé (Asociación Nacional del Café - Guatemala National Coffee Association) awarded it the Quality Cup designation. Their continued efforts and improvements over the years have earned them remarkable honors in the Cup of Excellence (COE) international competitions in 2002, 2007, and 2008.

Brewing Analysis for Guatemala San Sebastian Coffee Beans

Pour-Over Reference

Using a V60 dripper with 16g of coffee to 32g of water, bloom for 30 seconds at 89-90°C water temperature, with a 1:14 ratio. Use a medium-fine grind (setting 4 on a Fuji grinder). For the second pour, add water to 140ml, pause until the water level drops, then continue pouring slowly and evenly, keeping the water level from getting too high. Stop when reaching 220ml total, with an extraction time of 2:15 minutes. This method brings out the unique smoky notes and chocolate flavors. Feel free to adjust according to your personal taste preferences.
