PART 1
Coffee Bean Introduction
▶ Origin: Guatemala
The Antigua valley is Guatemala's oldest coffee-producing region. Volcanoes and extremely shallow groundwater levels create a dry microclimate. Rich volcanic soil, low humidity, intense sunlight, and cool evening breezes are the distinctive features of the Antigua region.
▶ Varieties: Bourbon, Caturra, Typica, Others
Guatemala coffee beans belong to the Bourbon family, one of the varieties with stronger acidity. The flavor is mellow and slightly wild, making it most suitable for blending into mixed coffee. This coffee bean variety includes Bourbon, Caturra, Typica, and others.
▶ Processing Method: Washed
The washed process preserves more of the mellow flavor of this bean, along with high aroma and lively acidity.
▶ Roast: Light Roast
Antigua coffee has a velvety body, rich and lively spice flavors, and a richer mouthfeel. It also possesses a fascinating tobacco taste with fine acidity, making it suitable for light roasting.
PART 2
Coffee Bean Review
▶ Appearance
Individual bean appearance: The beans are exceptionally smooth on the surface, very hard, full, thick, and brown in color.
Overall appearance: Coffee beans are uniform in size, smooth, and round.
Rating: ♥♥♥♥♥
▶ Grinding
Powder: Take 15 grams of coffee beans, grind to medium-fine consistency. The particles are fine, like granulated sugar, with delicate, uniform, and dry powder.
Dry aroma: Rich, with faint tobacco fragrance and fruity acidity.
Grinding rating: ♥♥♥♥♥
▶ Blooming
1. Use 90°C water with a 1:2 ratio, pouring in a circular motion over the coffee grounds in the filter paper.
2. Within 30 seconds after pouring, the coffee grounds "activate" and continuously expand like a hamburger patty.
3. Principle: Air expands when heated, causing the coffee to release large amounts of carbon dioxide, making the coffee grounds form an upward bulge.
Expansion rating: ♥♥♥♥
▶ Pouring and Extraction
1. When the blooming reaches its highest point and begins to shrink, pour water into the center at once, drawing slow circles.
2. Control the water-to-coffee ratio at 1:15, completing the entire extraction within 2:30.
3. During pour-over, the water flow must be steady, not too fast, and the water should not completely submerge the floating coffee grounds.
4. The extracted coffee has a clear color.
Wet aroma: Nutty oils, tea fragrance, creamy aroma, woody scent, blackcurrant notes, and light spice flavors.

Acidity: Acidity of plums and green fruits
Body/Mouthfeel: Astringent sensation
When the enticing rich aroma lingers on your palate, there's an indescribable mystery within. Rich, with a complex mouthfeel and tobacco flavor. The texture is smooth, with a slight charcoal-roasted taste amid the mellow richness, just like the sweetness of chocolate mixed with smoke. Due to this unique charcoal-roasted aroma, Antigua coffee is also known as "cigarette coffee."
At the first sip, you might find it plain, but as the coffee slowly cools, you'll discover its subtle sweetness and be surprised by its depth. This is a washed processed entry-level bean, suitable for those new to specialty coffee.
