Yirgacheffe: The Breeze of Spring

Yirgacheffe is like a spring breeze that greets you face to face.

It's the bright red berries hanging from the branches.

It's a garden where sunlight filters through gaps, spreading across green land.

Like other single-origin coffee names we're familiar with, "Yirgacheffe" is also a place name. However, whether in Chinese translation or in its Ethiopian pronunciation, the name carries an inherent girlish sweetness, setting it apart from other serious and deep coffee origins.

Yirgacheffe is a small town in Ethiopia, situated at an altitude of 1700-2100 meters. Since ancient times, it has been wetland. In the ancient language, "yirga" means "settle down," while "cheffe" refers to "wetland." Therefore, Yirgacheffe's original meaning is "let us settle down and make a living on this wetland."

On the map, Yirgacheffe is just a sub-producing area of Sidamo province in Ethiopia, nestled by mountains and water with the highest altitude. Because its production methods and flavors are so outstanding, its distinctive style has made it the most prestigious producing area in Africa.

Unique Growing Conditions

● The mountain villages in the Yirgacheffe region are shrouded in mist throughout the four seasons, with gentle breezes, cool but not hot, rainy but not damp. The original Yirgacheffe coffee trees were planted on the mountains by European monks. Nowadays, they are mostly planted in farmers' own backyards or intercropped with other crops on farmland. Each household's yield is small, making it typical pastoral coffee. Yirgacheffe mostly uses washed processing to preserve its refreshing and clean taste, but a small amount of specialty beans is intentionally sun-dried to enhance the charming fruity aroma and body.

Unique regional terrain is an advantage that every coffee plantation emphasizes, but Yirgacheffe has another distinctive point. From search materials or pictures provided by coffee estates, every coffee farmer wears a smile—a genuinely relaxed and comfortable smile. If coffee beans can honestly record the flavors of the land, they probably also record the joyful genes of these growers who "settle down and enjoy themselves." This is likely why they can nurture the most unique citrus and floral regional flavors.

The Perfect Roast

● The most appropriate roast we can think of

is to let Yirgacheffe maintain its true self.

As one of the most uniquely flavored coffee beans in the world today, a cup of Yirgacheffe should bring you strong citrus aromas, lemongrass, jasmine flowers, pomelo flowers, and gardenia fragrances, with rich yet soft and pleasant acidity. Sun-dried Yirgacheffe has a strong and pronounced flavor, full body, and more intense sweet-sour conflicts of fresh fruit. No wonder some say that only those who have tasted the highest grade sun-dried Yirgacheffe will believe that coffee is a fruit.

When we praise a fruit as delicious, it's not because it's sweet enough, but because we can taste the real flavor of the fruit. Therefore, a good cup of Yirgacheffe shouldn't be overwhelmingly aromatic. Like a gentle breeze, like a young girl, just appropriately expressing its true self is perfect.
