Discovering the True Essence of Coffee
I've always wanted to ask friends: what types of coffee have you tried? Convenient instant coffee, Americano from street-side coffee kiosks, siphon coffee or pour-over coffee made at home, or perhaps Espresso from cafés? Have you found yourself lost in the myriad varieties of coffee without ever truly tasting its authentic flavor? A cup of quality specialty coffee will completely transform your perception of coffee's bitterness.
Yirga Cheffe
Yirga Cheffe is a small town in Ethiopia, situated at an altitude of nearly 2,000 meters. This area has been wetland since ancient times, with Lake Turkana, Lake Abaya, and Lake Chamo creating a humid and gentle climate. Walking along mountain paths, you'll encounter misty surroundings and gentle breezes. In ancient language, this place was called Yirga Cheffe, where Yirga means "to settle down" and Cheffe means "wetland." Beyond being a place where humans establish their homes, this region serves as the cradle where the magical coffee crop grows. Thousands of coffee tree varieties thrive and propagate here, nurtured by moisture, sunlight, and refreshing breezes, creating Yirga Cheffe's delicate, soft texture and unique regional flavor where floral and fruity notes intertwine.
Yirga Cheffe was initially cultivated by European monks, later transitioning to management by surrounding coffee communities or cooperatives. Coffee trees aren't planted in continuous fields but rather scattered freely across this land. They grow quietly and unobtrusively in forests, fields, and even in front of and behind houses. Perhaps due to this environment, Yirga Cheffe has developed its uniquely charming flavor—featuring intense floral and fruity aromas, rich yet pleasant acidity, and a smooth texture as sweet and bright as fruit juice. Some describe it as a smiling young girl—who wouldn't love a girl as fresh and lively as morning dew under sunlight?
Yirga Cheffe Grading
Washed Yirga Cheffe grades: Grade 1, Grade 2
Natural Yirga Cheffe grades: Grade 1, Grade 3, Grade 4, Grade 5
Ethiopia's grading system isn't determined by bean size but rather by the proportion of defective beans among all coffee beans. Grade 1 represents the highest level, with the lowest defect rate and most superior quality Yirga Cheffe, commanding the highest price.

Konga is located in southern Ethiopia, in a small area called Gedeo within Yirga Cheffe town, where there are over 600 small farmers. Many of these coffee farmers are members of the Worka Cooperative, and their coffee batches consistently demonstrate astonishingly outstanding performance.
This Yirga Cheffe uses natural sun-dried processing. After manual harvesting, the beans undergo another manual selection before drying, then are placed on elevated, breathable mesh tents (with fruit skin and pulp intact) for sun-drying. The mesh tents not only improve air circulation but also prevent coffee cherries from absorbing undesirable flavors during the drying process—this is a significant reason why it tastes cleaner compared to other sun-dried coffees.
Lemon and orange fruit acidity with delicate texture, strong and deep strawberry and wine aromas, clean mouthfeel with complex flavor layers that spread across your palate like fruit wine. Excellent both hot and cold.
Like wine, coffee requires appreciation; it also needs time to gradually harmonize with your state of mind to find that perfect cup just for you. Once you try Yirga Cheffe, you'll fall in love because it offers jasmine, lemon, peach, almond sweetness, and tea notes. When the coffee enters your mouth, it's like a hundred flowers blooming, creating a wonderful taste experience.
