The Principle of Using French Press to Brew Coffee
The principle of using a French press to brew coffee is to use an immersion method, releasing the essence of coffee through comprehensive contact between water and coffee grounds using a steeping brewing method.
Tips for Choosing a French Press
The quality of filtration in a French press largely depends on the quality of the filter element. Selecting a press with a spring is extremely important for filtering coffee grounds, as it directly affects the taste of the coffee.
Tan's French Press Method
Step 1: Grind coffee beans - neither too coarse nor too fine is fine; no need to pay special attention to the grind size.
Step 2: Add appropriate amount of coffee grounds to the French press, approximately 9-10 grams of coffee grounds per cup of coffee.
Step 3: Add hot water to the French press, water temperature between 85-95 degrees Celsius is acceptable; 150-200 milliliters per cup of coffee.
Step 4: Shake the French press several times to fully mix the coffee grounds with hot water; as long as coffee grounds are concentrated and floating on the surface of the hot water, you need to shake; until there are basically no coffee grounds forming a layer on the surface of the hot water; no need to pay special attention to the soaking time of coffee grounds in hot water.
Step 5: Put the lid on the French press and press the filter down; let it sit for one minute, then you can pour it out and drink.
Problem Description
If you feel great resistance when pressing down the filter, it means there are a large amount of coffee grounds floating on the surface of the hot water that haven't sunk. This indicates that a large amount of coffee grounds haven't been fully soaked. Otherwise, when pressing down the filter, it should be very light with no pressure.
Tan's French press method doesn't have particularly strong requirements for coffee grind size. If the grind is coarser, the extraction time will automatically extend to achieve appropriate and sufficient soaking and full extraction. If the grind is finer, the soaking time will also automatically shorten to stop the soaking process promptly after full extraction. This is the advantage of Tan's French press method.

1. Prepare ground coffee. The key point of using a French press is the size of coffee particles. It's better to grind coffee into coarse particles using a burr grinder. If you use a spiral grinder, the particles will be ground very uniformly, making it difficult to achieve the best results. Moreover, since the French press is an immersion method, although it has a filter screen, its filter is not like filter paper, so filtration is still limited. If you grind too finely, you'll drink coffee grounds when you drink it.
2. Put appropriate amount of coffee in the pot. The amount suitable for one cup of coffee is about one teaspoon (7 grams), but you can use 5-10 grams depending on preference. After adding coffee grounds, add appropriate amount of hot water to make coffee. But actually, the editor consulted baristas with more French press brewing experience, and they all said this water-to-coffee ratio can be adjusted by yourself. Whether it's 1:13 or 1:15, this value is just a reference standard, not a hard rule. One barista uses 21 grams each time and finally makes 300 milliliters of coffee liquid. 3. Stir quickly with a wooden stick or plastic chopsticks to make coffee completely mix with water. At this time, fresh coffee will produce bubbles and mix in the water. If you use metal sticks or chopsticks, you might scratch the glass pot wall.
4. When the coffee is completely mixed in the water, pull the filter screen to the top and cover it, allowing the coffee to fully steep. Small pots take about 3 minutes, large pots about 4 minutes.
5. To prevent coffee from splashing out, turn the lid outlet to the back, staggered with the pot spout, then gently press the filter rod to the bottom. At this time, if you shake the filter rod, coffee grounds will easily escape from the gap between the pot wall. If the coffee is ground too finely, it will pass directly through the filter screen, and when pressing the filter screen, it will become difficult to press due to increased pressure. If you use too much force, coffee will overflow.
6. After pressing the filter to the bottom of the pot, wait again for the coffee powder to settle. You must press the rod tightly, pour out the coffee liquid, and don't want the remaining coffee liquid at the very bottom, as there will be a lot of powder residue.
