Tan's French Press Method:

Step 1: Grind Coffee Beans

Grind the coffee beans to a medium coarseness—neither too coarse nor too fine. There's no need to be overly concerned about the exact grind size.

Step 2: Add Coffee Grounds

Add an appropriate amount of coffee grounds to the French press, approximately 9-10 grams per cup of coffee.

Step 3: Add Hot Water

Add hot water to the French press, with water temperature between 85-95°C. Use 150-200 milliliters of water per cup of coffee.

Step 3: Stir Thoroughly

Shake the French press several times to ensure the coffee grounds mix thoroughly with the hot water. Continue shaking as long as coffee grounds are concentrated and floating on the water surface, until the water surface is essentially free of floating coffee grounds forming a layer. There's no need to be overly concerned about the soaking time of the coffee grounds in hot water.

Step 5: Press and Serve

Place the lid on the French press and press the filter down. Let it sit for one minute, then pour and enjoy.

Troubleshooting Notes:

If you feel significant resistance when pressing the filter down, it indicates that a large amount of coffee grounds is still floating on the hot water surface and hasn't sunk. This means that many coffee grounds haven't been fully soaked. Otherwise, when pressing the filter down, it should feel very light with no pressure.

Tan's French press method doesn't have particularly strict requirements for coffee grind size. If the grind is coarser, the extraction time will automatically extend to achieve appropriate and sufficient soaking and full extraction. If the grind is finer, the soaking time will automatically shorten to stop the soaking process promptly after full extraction. This is the advantage of Tan's French press method.

3. Stir Thoroughly

Stir quickly with a wooden stick or plastic chopsticks to ensure the coffee mixes completely with water. Fresh coffee will produce bubbles and mix into the water at this time. If you use metal sticks or chopsticks, you might scratch the glass pot walls.

4. Let Coffee Steep

When the coffee is completely mixed with water, pull the filter screen to the top position and cover, allowing the coffee to steep fully. Small pots require about 3 minutes, while large pots require about 4 minutes.

5. Press Filter Gently

To prevent coffee from splashing out, turn the lid outlet to the back, staggered with the spout, then gently press the filter rod to the bottom. At this time, if you shake the filter rod, coffee grounds can easily escape from the gaps in the pot walls. If the coffee is ground too finely, it will pass directly through the filter screen, and when pressing the filter screen, it will become difficult to press due to increased pressure. But if you use too much force, the coffee will overflow.

6. Serve Coffee

After pressing the filter to the bottom of the pot, wait for the coffee powder to settle again. Be sure to press the rod firmly and pour out the coffee liquid. Don't use the very bottom coffee liquid as it contains a lot of powder residue.
