The Advantages of Cold Drip Coffee
The advantages of cold drip coffee include being non-acidic and gentle on the stomach. This is because when making coffee using this method, the coffee beans selected are mostly dark-roasted varieties like Mandheling. Due to the principle that "light roast is fragrant but acidic, dark roast is bitter but rich," cold drip coffee is not acidic.
Another reason for choosing dark-roasted coffee beans is that cold coffee will be diluted with ice cubes after preparation. Therefore, dark-roasted beans must be selected for drip filtration to ensure sufficient richness.
The Origin and Process of Cold Drip Coffee
It is said that cold drip coffee was invented by the Dutch, hence it is also called Dutch drip coffee. Unlike other brewing methods that require hot water, cold drip coffee uses ice water to extract coffee. This low-temperature extraction requires more time to dissolve the aromatic substances from the coffee. Therefore, using a dropper similar to those in chemical experiments, ice water drips drop by drop, slowly infiltrating and permeating through the coffee grounds. In traditional cold drip coffee makers, the dripping speed can typically be controlled.
Therefore, a cold drip coffee pot consists of three parts: an upper pot for holding ice water, a filter set containing coffee grounds, and a lower pot for collecting the extracted coffee liquid. Sometimes, there is also a decorative snake-shaped glass tube at the front of the lower pot, allowing the brown liquid to wind its way down, which is quite fascinating.
Making Perfect Cold Drip Coffee
When making cold drip coffee, approximately a 1:6 to 1:8 ratio is used, meaning 100 grams of coffee grounds extract 600-800 CC of cold drip coffee. Besides adjusting the concentration according to personal taste, one must also consider that adding ice cubes will slightly dilute the flavor. Additionally, before the actual dripping process, coffee grounds must be completely soaked with cold water to avoid channeling phenomena that could cause extraction failure.
Like fine wine, creating delicious cold drip coffee requires patient waiting. The extraction process taking several hours is not enough - the coffee liquid must also be stored in a sealed glass bottle and placed in the refrigerator for one to three days. This slightly fermented taste makes the coffee even sweeter and smoother, reminiscent of the pure richness of whiskey.
