The Origin Story of Gesha Village Coffee

This batch of green beans is the first initial production from Gesha Village Coffee Estate. According to Brother Gao, who introduced the green beans, Adam Overton is an American journalist with a beautiful Ethiopian wife named Rachel. This couple rented a piece of land in Ethiopia, near the Gori Gesha original forest—the source of coffee—about 20 kilometers away, at an altitude of approximately 1950-2050 meters. Using local native shade trees, they cultivated and propagated six different sources of Gesha from the Gori Gesha original forest.

In 2007, Adam Overton interviewed and filmed a documentary about Panama's Gesha. Through the interview process, he developed a keen interest in the Gesha variety and its origins. They believed that by planting the original Gesha in its native habitat and allowing it to propagate in Ethiopia's century-old original forest, they would achieve the true characteristics that Gesha should possess. After more than a decade of effort, due to relaxed regulations and his wife's local status allowing land rental, they established their own coffee farm. In the third year of the coffee trees' growth, the trees were already laden with abundant fruit ready for harvesting. Typically, coffee trees require 5-6 years to reach this stage, proving that their initial concept of planting original varieties in their native habitat was correct.

Unique Growing Conditions

Although Gesha Village's altitude isn't particularly high, its bean density is quite impressive. The climate in this coffee's growing region is unique—sometimes changing four times between early morning and noon. Consequently, the sun-drying process after washing requires adjusting the ratio of shade-drying to sun-drying, extending the time needed for drying treatment by using a slower completion process. Furthermore, native varieties planted in their origin grow and mature much faster than typical coffee tree species. These special conditions may cause some unusual changes during roasting that require particularly careful handling.

Roasting Challenges and Solutions

During the first test roast of these green beans, the flavor was somewhat muted. This was because after entering first crack, it produced more moisture than other types of green beans, making temperature increase more difficult.

With the experience from the first test, the second roast accelerated the roasting rhythm slightly, adjusting for more heat energy to ensure better temperature increase after entering first crack, resulting in bright and richly layered flavors.

During the first test roast of Gesha Village coffee, first crack began at 7 minutes 58 seconds. Around the 9-minute mark (plus or minus 20 seconds), one could observe the very slow temperature increase rate of the beans. The second graph shows around 8 minutes 30 seconds (plus or minus 20 seconds). Due to the faster roasting rhythm in the second batch and higher heat energy provided, the time from first crack beginning to dropping the beans was shortened by 18 seconds.

Technical Notes on Roasting Equipment

It's worth noting that I use an Atti direct-fire roaster equipped with a highly sensitive thin-needle temperature probe. The temperature response sensitivity and immediacy are quite high, allowing for more detailed observation. The slight fluctuations in air temperature occur because when silver skins pass through the probe in the exhaust pipe, they touch the probe and affect temperature readings, making the curve appear less smooth. In contrast, many curve graphs shared online appear quite smooth, mainly because the response speed of probes installed in typical roasters is more moderate.
