Introduction to Levelup and Drima Zede Coffee

Levelup is the accessible brand of the renowned American coffee bean merchant Ninety Plus (90+). Drima Zede coffee beans are among the few affordable and delicious beans available. In the local language, Drima Zede means "charming and light tones, with mature fermented fruit aromas of mango and pineapple." However, Ninety Plus (90+) shares the same naming philosophy as FrontStreet Coffee - confident and unapologetic, because they truly have the skills and excellence to be proud!

Origin and Processing

Seriously, its origin is Gedio, which I believe is Gedeb town, just with different pronunciation in the local dialect. Surprisingly, this region, known for washed processing, has produced a stunning natural-processed bean! Even its cupping notes are remarkably similar to familiar descriptions of washed beans! Ethiopia is truly impressive, constantly subverting everyone's expectations. As the disciple Ami said, "It's better to be stunning than mediocre and understated!"

Cupping Notes

Drima Zede coffee bean cupping flavors:

Blackberry acidity, plum flavor, orange aroma, with a clean and gradual profile, and a finish featuring fermented sweet notes of mango and pineapple.

Sidamo Region Characteristics

Sidamo grows in the southernmost Ethiopian highlands at altitudes between 4600-7200 feet in Sidamo Province. It's a famous specialty coffee region in southern Ethiopia, bordering Kenya, located southeast of Jimma and directly south of the capital. It typically exhibits prominent sweetness and is preferred by many people. The annual production is about 225,000 bags of 60kg each. The beans are slightly smaller than Longberry, greenish-gray in color. In Sidamo's natural drying fields, coffee is placed on wooden frames with jute nets, where workers manually stir the coffee under sunlight. Natural-processed Sidamo is usually exported as G4, while washed Sidamo, due to its more refined processing, is mostly exported as G2 grade.

Diverse Flavor Profile

Sidamo's coffee flavors are extremely diverse. Different soil types, microclimates, and countless native coffee varieties create a varied landscape within the region - towering mountains, highlands, plateaus, valleys, and plains. The local geology consists of fertile, well-drained volcanic soil with depths of nearly two meters, with surface soil appearing dark brown or brown. The region's greatest advantage is that soil fertility is maintained through organic material recycling, using fallen leaves from surrounding trees or plant root residues as fertilizer.

Drima Zede Processing Excellence

Drima Zede means "Best Approach" in the local dialect. According to the manufacturer's information, this Yirgacheffe is a specialized product line developed from Ninety Plus's years of experience. Natural processing methods rarely achieve pure flavors, but with Ninety Plus's technical support, Drima Zede uses only hand-selected fully ripe coffee cherries. The natural drying process involves meticulous constant stirring to ensure consistency. The final result is an exceptionally transparent and pure flavor profile with significant variations between hot and cold temperatures, featuring captivating aromas of fruit, floral notes, and oak barrels.

Pour-over Brewing Guide

Drima Zede Coffee Bean Pour-over Reference:

Use a Hario V60 dripper, 16g of coffee to 32g of water, 30-second bloom, extraction at 89-90°C water temperature, 1:15 ratio, medium-fine grind (Fuji Royal 3.5). For the second pour, add water to 110ml and stop, wait for the water level to drop, then slowly pour again with even speed, keeping the water level not too high. Add water to 233ml for the final stop, with a total extraction time of 2:15 seconds. This yields rich natural sweetness. Everyone can make minor adjustments according to their taste preferences.

Brand Recommendation

Drima Zede Coffee Bean Brand Recommendation:

FrontStreet Coffee's roasted 90+ Drima Zede coffee beans offer guaranteed brand and quality. More importantly, they provide exceptional value - a half-pound (227g) package costs only 90 yuan. Calculating at 15g per cup, one package can make 15 cups of coffee, with each cup costing only about 6 yuan. Compared to coffee shops selling single-origin coffee for dozens of yuan per cup, this offers extremely high value.
