Discovering Sidamo Coffee

Coffee lovers have most likely tasted Ethiopian coffee beans. Ethiopia's main producing regions include Yirgacheffe, Sidamo, Kochere, Harar, and Guji. Among these, Sidamo is renowned for its elegant, delicate, and diverse floral and fruity aromas.

Sidamo is a coffee-producing region in southern Ethiopia, situated at elevations of 4,600-7,200 feet (1,400-2,194 meters). Located in the southernmost part of the Ethiopian highlands, it borders Kenya. As someone who fancied myself a cultural enthusiast, I always assumed that the African highlands must be water-scarce, so when drinking African coffee, I naturally chose natural-processed beans. In reality, local processing stations offer both washed and natural-processed varieties.

After developing a habit of drinking coffee, I sometimes research producing regions online. Only then did I learn that Sidamo is actually a province in Ethiopia, with a territory much larger than we might imagine. The coffee here is incredibly diverse, with towering mountains, plateaus, valleys, and plains creating varied terrain. Abundant rainfall and fertile soil cultivate excellent coffee beans. Among these, the washed-processed coffee beans are clean and pure, with bright fruit acidity that is mellow and rich. No wonder the coffees I had previously tried were all washed-processed.

A good friend specially recommended I try this Zhumaang coffee bean from Sidamo, which is natural-processed. Initially, I was just trying something new, as most Ethiopian coffees I drink are washed-processed. Unexpectedly, after just half a pound and several brewing sessions, I discovered I had fallen in love with this natural-processed coffee. Since then, in the Sidamo region, I switched to drinking Zhumaang—until my friend ran out of beans, of course.

Drima Zede: The "Best Approach"

Drima Zede means "Best Approach" in the local language. According to information provided by the original producer, this product line is a specialized series developed based on Ninety Plus's years of experience. The name "Best Approach" undoubtedly declares this product as the closest to Ninety Plus's classic natural-processed Yirgacheffe flavor profile. We tentatively translated its Chinese name as "Jue Ji" (绝计), which truly brings to mind the classic series first introduced by Ninety Plus around 2007!

Ninety Plus is an internationally acclaimed coffee bean production and sales company, renowned worldwide for providing rare and unique green coffee beans. In 2007, Joseph Brodsky officially founded Ninety Plus, and from the following year until now, we can see traces of Ninety Plus award winners in coffee competitions of all sizes around the world. Last year, in the 2013 WBC World Barista Championship, six finalists used Ninety Plus green beans, including competitors from Italy, South Korea, and Canada. Refined green bean cultivation and processing, excellent coffee varieties, and a unique grading system have made Ninety Plus a top-tier and distinctive representative in the green coffee market.
