Ethiopia - Yirgacheffe Coffee Beans (Natural Process) Aricha G1 Roasting Records

(1) Start roasting at 190°C. Back-curve at 34°C, controlled at 8:00 time with temperature at 157°C; increase heat to 230°C, reduce temperature to 190°C at 185°C, first crack at 11:00 with 201°C, finish at 12:30 with 205°C. (100 seconds from first crack to completion)
Originally planned to finish at 210°C after 90 seconds from first crack, but time was up before reaching temperature. The bean color looked right so I finished. However, temperature should be the priority. Will wait to taste test!
Taste profile: As soon as the coffee beans are ground, very clear berry aroma wafts up - sweet and fragrant. Unlike other coffee beans whose aromas are generally hard to describe clearly - can only roughly note nutty or woody notes, or simply fruit and floral tones - but this bean immediately reveals blueberry fragrance upon smelling, clear and complete aroma, much like the Colombian Geisha I smelled before, though Geisha was sweeter. During pour-over, the wet aroma wafts up in waves, truly anticipating that first sip, fearing disappointment as so many coffees have wonderful dry aroma but taste merely average.
The first sip reveals gentle, non-aggressive berry acidity, unlike the stimulating bright citrus acidity of washed beans. Clear without off-flavors, with texture and special charm, finishing with light floral notes and berry aftertaste. Delicious! The second sip seems to capture the sunshine flavor emitted from coffee beans grown in gentle sunlight. The berry acidity transforms into sweetness, much like blueberry jam. Truly wonderful!
Because it's roasted to about medium-first crack, the characteristic is front-end aroma, not pursuing the rich bittersweet aftertaste of the middle and later stages.
(2) Second roasting: first crack at 11:20 with 192°C; finished at 13:00 with 206°C. (100 seconds from first crack to completion)
Taste profile: Similar to the first time.
Ethiopia is the birthplace of Arabica and a genetic treasure house, with extremely diverse existing wild varieties. Any one variety flowing out would be enough to shake up the coffee industry. Ethiopia's most famous coffee is Yirgacheffe. Yirgacheffe is a small town at 1700-2100 meters altitude, located next to the Sidamo region. Originally it should be called Sidamo coffee, but because of Yirgacheffe's unique flavor, it became independent from the Sidamo region. Ethiopia grades coffee into five levels, from Grade 1 to Grade 5, with Grade 1 being the highest grade, with 0-3 defective beans per 300 grams of raw beans. Grade 2 has 4-12 defective beans. Grade 1 and Grade 2 are usually washed beans, while others are mostly natural process. Yirgacheffe offers very distinct fruit acidity, with clear sweetness within the acidity, making the aromatic acidity very gentle. Its aroma lingers in the upper palate for about half an hour. Bitterness and sweetness are very low, consequently the body is also lighter, but its sweetness creates a viscous sensation between the lips, as if sugar has been added.
If all African coffee varieties were transformed into a bouquet, Yirgacheffe would be one of the most beautiful flowers among them.
Ethiopia is the birthplace of Arabica coffee beans. Generally, pure Arabica coffee beans grow at 4,000 to 6,000 feet altitude, while Yirgacheffe grows at 6,900 feet (2,300 meters, equivalent to Alishan's height), in forest-shaded sparsely populated areas. It was once Ethiopian royalty's exclusive coffee. Today, coffee beans from the Yirgacheffe region bring Ethiopia 67% of its foreign exchange earnings.
After removing the outer skin, pulp, and mucilage, the coffee cherries are placed in fermentation tanks for 72 hours, making it a washed coffee bean. Therefore, besides floral notes, it also carries wine-like flavors.
Yirgacheffe has quite subtle floral aromas, hidden within its round, smooth texture - the fragrance of flowers, fruits, and high mountain black tea. Slight sweetness of orange peel, small seedless raisins and cinnamon, even dark chocolate flavors, paired with clean, crisp acidity, weave together gentle, pleasant flavors and aftertaste.
