The Infinite Possibilities of Coffee Beverages

Coffee beverages have countless possibilities, and roasters no longer limit beans from a specific origin to a single style. For example, sometimes when we're out, we can taste Mandheling that isn't medium-dark roasted but instead is lightly roasted—such Mandheling tastes refreshing and sweet. Or like sun-dried beans that are as clean as washed beans, with flavors that are also quite bold.

Although roasting techniques and green beans mostly determine the quality of a cup of coffee, it's the barista who decides the mouthfeel and different styles of expression for the beans. Therefore, this time I'd like to share two different extraction methods for the same bean to create two distinct taste profiles.

Two Style Examples:

  2. Mouthfeel Style

The Coffee Bean Used: Panama Boquete Region's Mariposa Coffee Bean

Mariposa coffee beans have approximately 50% Geisha premium heritage, composed of three varieties: Geisha, Caturra, and Catuai. They are grown in the Baru volcanic region of Boquete, at an altitude of 1600 meters in volcanic areas. The processing plant uses refined washed processing methods.

Roasting Level: Light roast - Temperature 190°C, beans dropped at 1 minute 28 seconds.

Grinder Used: BARATZA BG

Balanced Style Brewing Method:

Dripper: Hario V60 transparent resin

Grind Setting: BG grinder: 4v

Water Temperature: 90°C

Pour 29g of water for blooming, start timing, wait 29 seconds.

Continue pouring 128g of water until the coffee bed drops by about 1 centimeter, then continue pouring to 230g and wait for all water to drip through the filter.

Total Time: 1 minute 50 seconds

When hot, honey flavors are prominent with a hint of fragrant barley tea.

When the temperature drops to around 65°C, flavors begin to emerge: floral notes, honey, jasmine tea, and citrus.

The mouthfeel is balanced and refreshing with harmonious flavors.

Mouthfeel Style Brewing Method:

Dripper: Kono resin 90th anniversary edition

Grind Setting: BG grinder: 4t

Water Temperature: 85°C

Pour 28g of water for blooming, start timing, wait 31 seconds, then pour to 101g. Wait for the water level to drop close to the coffee grounds, then use slow, large circular motions to pour to 205g. Stop pouring and wait for all water to drip through the filter.

Total Time: 1 minute 55 seconds

When hot, the mouthfeel is rich with prominent tea-like aromas.

Similarly, wait for the temperature to drop a bit for the flavors to burst forth.

Flavors: Melon, floral notes, lychee, orange

Mouthfeel: High texture, rounded

Brewed this way, it tastes much more like a Geisha—I was even surprised myself.

Using the KONO dripper is mainly because of its slower flow rate to increase coffee steeping time. Because the roast is light, this helps avoid amplifying tea-like or herbal notes. Using relatively low temperatures with slow, thick water streams reduces stirring次数 to avoid messy flavors. Since there are fewer extracted compounds, the water ratio is shortened.

Regardless of the brewing method, whether balanced or with stronger texture, it's all about bringing a cup that better matches each guest's preferred style, getting closer to what they imagine.
