Understanding Mariposa Coffee Beans

Mariposa coffee beans have become well-known for containing a proportion of Geisha variety, but what exactly is that proportion? Starting from the previous Panama Cupid with 30% Geisha, Mariposa has 40%, and then the natural process reached 50%. This year, what's circulating more in the market is 70% Geisha content, as indicated by the green bean supplier's information. It's not an exaggeration to say Mariposa resembles Geisha - although there are still differences, it maintains a high value-for-money approach.

Mariposa coffee beans are not the most powerful heirloom single-variety specialty coffee. She has broken some respected traditions and principles, successfully transforming herself through metamorphosis.

I couldn't resist taking 200g of roasted beans and sorting out 26g of Geisha from them. The Geisha beans were pointed, long, and full, with clear differences in appearance from other mixed genetic varieties like Geisha, Caturra, and Catuai, making them easy to identify.

Green Mariposa Beans

Among the 26g I sorted out, there were no short, round-shaped Geisha beans. The short, round-shaped Geisha looks somewhat similar to Caturra and Catuai.

Diversity in Geisha Bean Appearance

Even among Geisha beans, there is diversity in appearance:

Some have pointed, long bodies with more open center fissures;

Others have relatively short, round bodies.

Geisha genes seem somewhat unstable - some green tops turn red, pointed long bodies transform into short round ones, and the flavors also differ slightly. There are 12 types of Geisha genetic varieties.

The pointed Geisha has more prominent floral aromas and fruit acidity, while the round beans have sweetness and fuller body. Both have distinct characteristics.

Some Geisha circulating in the market are also mixed with different genes, and this Mariposa bean is the same - besides different variety combinations, there are also different genetic variety mixtures.

Sorted Pointed Geisha Beans

I couldn't resist trying pour-over with these 26g of large, pointed Geisha beans I sorted out:

Bean roasting time: 5 days before brewing

Roast level: Light roast

Grinder used: BARATZA BG

Standard pour-over grind setting: 4Y

Water temperature: 91°C

Dripper: Hario small glass

Coffee-to-water ratio: 1:14

Total time: 1 minute 55 seconds

Aroma: Malt sugar, black tea, jasmine, fresh fruit, full sweetness, juice-like liquid, clean.

Flavor: Floral, citrus, berries, honey

The overall feeling is very much like La Esmeralda Geisha. Although I wasn't amazed by the taste, I was very surprised to find this in Mariposa. It's even more worth drinking than other Geishas, with very delicate texture. The flavors aren't particularly numerous, but sufficiently distinct.

The Remaining Beans

After removing 13% of the pointed Geisha, I continued with pour-over brewing the remaining 87% of beans:

Flavor: Bergamot, orange, oolong tea, wheat, honey. The floral performance is slightly weaker, mixed with a hint of wheat aroma. The finish has tea notes, thin acidity, and while the body isn't thick, it's still delicate.

I clearly felt the Geisha flavor profile, which sufficiently proves that the green bean supplier's information is quite reliable. Even if I don't think it reaches 70% Geisha varieties, it should be around 50%. It's just that different genes mean different bean appearances, and the defect rate is relatively higher compared to other single-variety Geishas.
