The Terroir of Baru Volcano

Baru Volcano is not only Panama's highest mountain range, but early volcanic activity and eruptions deposited substantial, extremely fertile soil. This soil is rich in nutrients, with volcanic ash particularly abundant in phosphorus and sulfur. Mixed with clay and combined with unique climate patterns, this region creates an environment suitable for growing premium coffee. Dense forests and numerous species form overall biodiversity.

Sustainable Farming Practices

Approximately 50 local coffee farmers form a small cooperative, all using traditional Boquete methods to produce coffee—allowing coffee to grow in a near-natural environment. Although production is not high, it maintains a rich ecological environment, and soil quality can be preserved or even improved. Natural farming methods not only benefit the environment but also allow coffee cherries to grow slowly, making it easier to produce high-quality, exceptionally flavorful coffee beans. The processing plant is about 4 kilometers from the farms and includes a modern laboratory for cupping quality control and manual sorting.

Tasting Experience

Dry Aroma

After grinding, the dry aroma is abundant and exceptionally clear with fruity-floral tonality. The first impression reveals distinct fruit-like fresh acidity, invigorating and refreshing. The crisp acidic aroma of green apple and the sweet-tart notes of berries are easily identifiable. The second impression reveals richer floral notes emerging simultaneously with a hint of sweetness. However, it doesn't reach the high sweetness of caramel as one might imagine. Mango flavor was not distinctly identifiable.

Bloom Aroma

Although the dry aroma scores high, the bloom aroma during the wet phase is considerably less impressive, with most of the dry aroma notes being masked. If Flower Butterfly contains 40% Geisha, I believe this relatively plain wet aroma performance is suppressed by Geisha's signature tea-like characteristics. Compared to the vibrant dry aroma, the wet aroma is almost monotonous and insignificant, scoring no points in the wet aroma category—truly regrettable.

Tasting Notes

The entry is gentle, but I prefer to describe it as "rich" rather than "clean." Clean is typically used to describe one or two clearly distinguishable flavors or textures, whereas the initial impression of this cup reveals more complex and multi-layered flavors. Various fruit acids harmoniously blend together, with acidity that is not high—belonging to the gentle and transparent category. As the temperature decreases, it becomes increasingly smooth.

If you try to individually identify which specific fruit acids belong to which fruits, it's not that easy, so don't strain your brain trying. Since it's a complex integrated flavor, appreciate it for its integrated characteristics rather than being too rigid and literal. As for the cream aspect, this usually describes the smoothness and viscosity of the texture rather than the flavor. This coffee has both softness and smoothness in its mouthfeel, but the viscosity is somewhat thin, making it more easy-drinking without resistance.

Regarding the caramel component, my instinctive reaction when seeing this word is to associate it with high sweetness, but this cup I brewed didn't exhibit the expected high sweetness—the sweetness is on the lighter side.
