Panama is a Central American country, bordered by Costa Rica to the west and Colombia to the east. Those familiar with single-origin coffee should know that Panamanian coffee is renowned in the coffee world for the Geisha variety from Hacienda La Esmeralda. It can be said to be a country that pursues excellence in coffee and produces high-quality coffee beans.
Panamanian coffee is famous for the Geisha from Hacienda La Esmeralda, and the region where Hacienda La Esmeralda is located is also quite famous: the Boquete region in Chiriqui Province. Boquete is a town in Chiriqui Province, situated near the border between Panama and Costa Rica, close to the famous Baru Volcano. With its beautiful scenery, fertile and rich soil, and climate and soil conditions perfect for producing high-quality coffee.

Mariposa coffee beans have 40%-50% premium Geisha heritage, composed of three varieties: Geisha, Caturra, and Catuai. They are grown in the Baru Volcano region of Boquete, at an altitude of 1,600 meters in volcanic areas. The processing plant uses fine washed processing. Panama's special local microclimate leads to abundant rainfall in this region, large day-night temperature differences, unique volcanic rock soil from the volcanic area, and meticulous harvesting and fine processing. This makes the coffee perform exceptionally well in terms of body, acidity, and floral notes.

Research shows that due to the estate's historical reasons, in pursuit of higher yields, early Geisha varieties were mixed and planted together with Caturra and Catuai varieties. For easier harvesting, coffee farmers did not reclassify them but processed all three varieties directly together.

Roasting Profile
Due to the special nature of this Mariposa's varieties, we use a light-medium roast to complete the final flavor direction of this bean, deciding to shorten the Maillard reaction time and follow a relatively fast curve. Due to the bean's high density and hardness, we start with high heat for dehydration, then reduce heat before first crack to enter the crack, minimizing the loss of aromatic substances like floral notes, preserving the unique Geisha floral notes, white grape, caramel, honey, and black tea aromas.

First pour 30g water for 28-30s bloom, then pour to 110g, stop at 140g, wait for the water level in the coffee bed to drop to half before pouring again, slowly pour until reaching 225g total, avoiding the last 5g. Extraction time: 2:00s.
