The Catuai tree is relatively low-growing. Compared to other coffee trees, Catuai's fruits grow more firmly and are not easy to pick. The fruits come in both red and yellow varieties. To date, no superior taste has been found in yellow fruits compared to red ones. In fact, some people have discovered in cupping that while coffee processed from some yellow fruits has good acidity, the cleanliness of the coffee's mouthfeel is inferior to that of red fruits.

Catuai was cultivated in Brazil and is now commonly grown throughout Central America.

Panama Coffee Regions

Premium Panamanian coffee is grown in the western part of the country, near Costa Rica and close to the Pacific. Coffee produced in the Boquet region of Chiriqui province is most famous, with Volcan, Santa Clara, and Candela also being well-known. Other regions include the David district, Remacimeinto district, Bugaba district, and Tole district. Only coffee grown at altitudes between 1,300 and 1,500 meters is considered specialty coffee.

Catuai Variety Details

"Catuai" is a hybrid of New World and Catuai, making it a second-generation mix. It inherits the advantage of Catuai's low tree stature. The variety name Catuai comes from an indigenous language, meaning "very good." As a member of the Arabica family, Catuai is relatively high-yielding.

Brewing Method

Panama Flint Estate pour-over: 15g of coffee, medium grind (Fuji ghost tooth blade #4), V60 dripper, water temperature 88-89°C. First pour 30g water, bloom for 27 seconds, pour to 105g and stop, wait until the water level drops to half, then slowly pour until reaching 225g. Avoid the tail section. Water-to-coffee ratio 1:15, extraction time 2:00.
