Brazil HiU Micro Lot
The HiU program is an initiative to improve coffee quality in Central and South America, proposed by Mr. Graciano Cruz, a Panamanian expert in honey processing methods. The program focuses on post-harvest processing using natural or honey processing methods for micro lots. Only coffees that achieve cupping scores above 85 can bear the HiU seal, creating a win-win situation for both estate owners and processors.

While Brazil offers a wide variety of coffees, its industrial policy emphasizes quantity and affordability, resulting in relatively few premium-grade coffees. However, Brazilian coffee serves as an excellent choice for blending with other origins.
Brazilian coffee features low acidity combined with pleasant bitterness, resulting in an exceptionally smooth mouthfeel with subtle grassy aromatics. The light fragrance hints at bitterness, while the sweet, smooth finish leaves a refreshing aftertaste. Brazilian coffee may not have particularly outstanding characteristics, but it lacks significant flaws. This mild, smooth profile with low acidity, moderate body, and subtle sweetness combines all gentle flavors into a harmonious whole, presenting the ultimate challenge for discerning palates to distinguish each note individually.
In the Cerrado region of Minas Gerais state in southeastern Brazil, some estates cultivate ancient Bourbon and Yellow Catuai varieties. While these estates originate from the same region, each coffee possesses distinct characteristics. Despite this diversity, Brazilian coffee appeals to popular taste. As the largest coffee producer, Brazil accounts for one-third of global consumption across various grades and varieties, holding a significant position in the global coffee trading market. Although Brazil faces natural disasters several times more frequently than other regions, its vast cultivable area more than compensates for these challenges.
Primavera Estate Yellow Catuai [Washed Process]
Flavor Notes: Orange, peanuts, genmaicha tea, nuts, caramel aftertaste. The fresh orange juice-like sweet and sour sensation with smooth texture represents typical natural Brazil flavor characteristics.
Yellow Catuai is a hybrid of Mundo Novo and Caturra, first developed in 1949 by Brazil's Instituto Agronômico de Campinas (IAC). Like Red Catuai, Yellow Catuai offers excellent disease resistance and is suitable for high-altitude cultivation.
Brewing Method: Hand Pour Primavera Estate
15g coffee, medium grind (using Fuji grinder #4), V60 dripper, water temperature 88-89°C. First pour: 30g water, bloom for 27 seconds. Pour to 105g, then pause until the water level drops halfway in the coffee bed. Continue pouring slowly until reaching 225g total. Avoid the tail end. Water-to-coffee ratio: 1:15, extraction time: 2:00.
