Brazil HiU Micro Lot

The HiU program is a plan to improve coffee quality in Central and South America, proposed by Mr. Graciano Cruz, a Panamanian expert in honey processing. It focuses on applying natural or honey processing methods to micro lots, with only coffees scoring above 85 in cupping allowed to bear the HiU seal. This creates a win-win situation for both estate owners and processors.

Brazil offers a wide variety of coffee types, but its industrial policy emphasizes mass production at low costs. Therefore, truly premium specialty coffees are not abundant, though Brazilian coffee serves as an excellent choice for blending with other origins.

Brazilian coffee features lower acidity combined with pleasant bitterness, resulting in an exceptionally smooth mouthfeel with subtle grassy aromatics. It presents a clean, slightly bitter profile that's smooth and pleasant, with a refreshing finish. While Brazilian coffee may not have particularly outstanding characteristics, it also lacks obvious flaws. This mild, smooth profile with low acidity, moderate body, and subtle sweetness creates a harmonious combination of flavors that presents an excellent challenge for the palate to distinguish individually.

In the Cerrado region of Minas Gerais state in southeastern Brazil, some estates grow ancient Bourbon and Yellow Catuai varieties. Although these coffees come from the same region, each possesses distinct characteristics. Despite this diversity, Brazilian coffee suits popular tastes well. As the world's largest coffee producer, Brazil accounts for one-third of global coffee consumption across various grades and types, holding a significant position in the global coffee trading market. Although Brazil faces natural disasters several times more frequently than other regions, its vast cultivable area more than compensates for these challenges.

Minas Gerais Primavera Estate Yellow Catuai [Washed Processing]

Flavor: Orange, peanuts, brown rice tea, nuts, caramel finish, with the sweet-tart sensation of fresh orange juice and a smooth texture—typical of natural Brazilian coffees.

Yellow Catuai is a hybrid of Mundo Novo and Caturra, first developed in 1949 by Brazil's Instituto Agronômico de Campinas (IAC). Like Red Catuai, Yellow Catuai possesses excellent disease resistance and is suitable for cultivation at high altitudes.

Hand Brew Preparation for Brazil Primavera Estate: Using 15g of coffee ground to medium grind (Fuji mountain grinder setting 4), V60 dripper, water temperature 88-89°C. First pour: 30g water, bloom for 27 seconds. Continue pouring to 105g, then pause until the water level drops to halfway. Slowly pour until reaching 225g total, avoiding the final tail section. Water-to-coffee ratio 1:15, total extraction time 2:00.
