Shakisso, located in the Guji zone of the Oromia region, borders Sidama and Gedeo to the south. This area contains numerous mining pits that were historically used for gold extraction, resulting in many holes throughout the coffee-growing region. This makes walking through the coffee cultivation areas particularly dangerous. Shakisso stands as a distinctive growing region within Guji/Sidamo - even within Sidamo, it remains a remote area far from most coffee-producing locations. Another notable local product is gold mining. Factors such as miners, land disputes, and ethnic tensions contributed to regional instability in 2006. Consequently, the area now faces its greatest challenge: the need for human resources to maintain the cultivation areas and harvest coffee. Local smallholder farmers began growing organic coffee in 2001, working closely with medium-sized coffee producers who possess expertise in cultivating forest coffee in highland regions.

Tasting Notes

Dry Aroma

Sweet cherry, raisins, preserved fruits, preserved plums, dried pineapple, strawberry

Wet Aroma

Cherry, cranberry, sweet orange, plum, blueberry, honey peach, lychee

Cupping Notes

The entry presents as sweet and juicy peach, with sweet pineapple acidity. The midsection reveals dense aromas of cranberry, blueberry, strawberry, pineapple, and dried fruits that fill the palate. The finish features lychee and plum flavors with dried fruit-like viscosity. This entire bean experience is like a tropical fruit storm assault - elegant yet dominant, as if falling into an ocean of nectar, just as its name suggests.

Brewing Method

For pour-over Sidamo: Use 15g of coffee ground to medium-fine consistency (Fuji ghost tooth grinder setting 3.5), V60 dripper, water temperature 91-93°C. First pour 30g of water for a 27-second bloom, then pour to 105g and pause. Wait until the water level drops halfway in the coffee bed before continuing the pour. Slowly pour until reaching 225g total, avoiding the final tail section. Water-to-coffee ratio of 1:15, total extraction time 2:00.
