Shakisso stands unique in the Guji region of Sidamo. It is an area distant from most coffee-producing regions in the Sidamo province. The local another famous industry is gold mining, with factors such as labor, land, and ethnicity making this producing area turbulent. However, the coffee from this region is quite special—Ninety Plus's legendary bean Nekisse also comes from this area.
Nectar, which literally means the nectar of Shakisso flowers. If you open the Coffee Review website and search with "Guji" as the keyword, there are over ten reviews with scores above 92 points, and several instances of high scores of 94 and 95 points.
The Shakisso Region
Shakisso, located in Guji, southern Oromia region, borders Sidama and Gedeo. This area has many mine pits, which were originally used for gold mining, so there are many pits in this coffee growing area. This makes walking between coffee growing areas full of danger. Shakisso is a unique producing area in Guji/Sidamo, and even within Sidamo, it's a remote area far from most coffee-producing locations. Another famous local product is gold mines. Factors such as miners, land, and ethnicity also made the region turbulent in 2006. Therefore, the biggest problem this region faces now is the need for manpower to maintain the growing areas and harvest coffee. Local small farmers in this area began planting organic coffee in 2001 and work closely with medium-sized coffee producers because they are familiar with how to grow forest coffee in highland areas.

Sipping
The entrance is like sweet and juicy honey peach, with sweet pineapple acidity. The mid-section reveals dense aromas of cranberry, blueberry, strawberry, pineapple, and dried fruits that fill the mouth. The aftertaste brings lychee and plum flavors, with dried fruit-like viscosity. The entire bean is like a tropical fruit storm assault—elegant yet dominant, falling into an ocean of nectar as its name suggests.
Brewing Method
Pour-over Sidamo. 15g powder, medium-fine grind (Fuji demon-tooth blade 3.5 grind), V60 dripper, 91-93°C water temperature. First pour 30g water, let it bloom for 27 seconds. Pour to 105g and stop. Wait until the powder bed water level drops to half, then pour again. Slowly pour until reaching 225g. Avoid the tail section. Water-to-powder ratio 1:15. Extraction time 2:00.
