[Slurping] The entry is like sweet and juicy honey peach, with sweet pineapple acidity. The mid-section reveals dense aromas of cranberry, blueberry, strawberry, pineapple, and dried fruit filling the palate. The finish brings lychee and plum flavors, with dried fruit-like viscosity. This entire bean is like a tropical fruit storm assault - elegant yet dominant, falling into an ocean of nectar as its name suggests.
Hand Brew Method
Hand-poured Sidamo. 15g of powder, medium-fine grind (Fuji ghost tooth blade 3.5 grind), V60 filter cup, 91-93°C water temperature. First pour 30g of water, let bloom for 27 seconds. Pour to 105g then pause. Wait until the water level drops to half, then continue pouring slowly until reaching 225g. Avoid the tail section. Water-to-powder ratio is 1:15, extraction time 2:00.

Regional Background
Shakicho stands unique within Guji in the Sidamo valley, and is also an area distant from most coffee-producing regions within Sidamo province. The local other famous industry is gold mining, with labor, land, and ethnic factors making this region turbulent. However, the coffee from this area is quite special - Ninety Plus's legendary bean Nekisse also comes from this region.
Nectar, originally meaning the nectar of Shakicho. If you open the Coffee Review website and search for "Guji" as a keyword, you'll find over ten reviews scoring above 92 points, with several high scores of 94 and 95.
Shakicho, located in Guji, southern Oromia region, borders Sidamo and Gedeo. This area has many mine pits, which were originally used for gold mining, so there are many pits in this coffee-growing area. This makes walking between coffee-growing areas full of danger. Shakicho is a unique region within Guji/Sidamo - even within Sidamo, it's a remote area far from most coffee-producing areas, while the local other famous product is gold mining. Miners, land, and ethnic factors also made this region turbulent in 2006. Therefore, the biggest problem this region faces now is the need for manpower to maintain the growing areas and harvest coffee. Local small farmers here began growing organic coffee in 2001 and work closely with medium-sized coffee producers because they know how to grow forest coffee in highland areas.
