Catuai Coffee Variety

Catuai is an artificial hybrid coffee variety cross-bred from Caturra and Mundo Novo. Catuai has good resistance to natural disasters, particularly strong resistance to wind and rain.

The Catuai tree variety is relatively low-growing. Compared to other coffee trees, Catuai's fruit grows more firmly and is not easy to harvest. The fruit comes in both red and yellow varieties. To date, no superior taste has been found in yellow fruit compared to red fruit. On the contrary, some people have discovered in cupping tests that although coffee processed from some yellow fruits has good acidity, the cleanliness of the coffee's mouthfeel is inferior to that of red fruit.

Catuai was cultivated in Brazil and is now widely planted throughout Central America.

Panama Premium Coffee Regions

Premium coffee in Panama is grown in the western part of the country, near Costa Rica and close to the Pacific coast. Coffee produced in the Boquet district of Chiriqui province is most famous, with Volcán, Santa Clara, and Candela also being well-known. Other regions include the David district, Remacimientos district, Bugaba district, and Tole district. Only coffee grown at altitudes between 1300 and 1500 meters is considered specialty coffee.

Catuai Characteristics

"Catuai" is a hybrid of Mundo Novo and Caturra, making it a second-generation hybrid. It inherits the advantage of Caturra's low-growing stature. The variety name Catuai comes from an indigenous language meaning "very good." As a member of the Arabica family, Catuai is relatively high-yielding.

Brewing Method

Hand-pour Panama Flint Estate. 15g of coffee grounds, medium grind (Fuji Royal hand grinder with serrated burrs set to 4), V60 dripper, water temperature 88-89°C. First pour 30g of water for 27 seconds bloom, then pour to 105g and pause. Wait until the water level drops to half before continuing the pour. Slowly pour until reaching 225g total. Discard the final tail. Water-to-coffee ratio 1:15, extraction time 2:00.
