Cupping Notes

Dried fruit aroma, rich fruit acidity, noticeable sweetness upon entry, lemon, orange, cranberry, green tea, with uniform and smooth texture, soft and with some floral notes, long-lasting aftertaste.

Catuai

Catuai is a coffee variety artificially hybridized from Caturra and Mundo Novo. Catuai has relatively good resistance to natural disasters, particularly wind and rain.

Catuai trees are relatively short compared to other coffee trees. Catuai fruits grow more firmly and are not easy to harvest. The fruits come in both red and yellow varieties. To date, no difference has been found in taste between yellow and red fruits. In fact, some people have found in cupping that although some yellow-fruit processed coffees have good acidity, the cleanliness of the coffee taste is inferior to that of red-fruit processed coffees.

Catuai was cultivated in Brazil and is now widely grown in Central America.

Panama's premium coffee is grown in the western part of the country, near Costa Rica and close to the Pacific Ocean. Coffee produced in the Boquet district of Chiriqui province is the most famous, with Volcan, Santa Clara, and Candela also being well-known. Other regions include the David district, Remacimeinto district, Bugaba district, and Tole district. Only coffee grown at altitudes between 1300 and 1500 meters is considered specialty coffee.

"Catuai" is a hybrid of Mundo Novo and Caturra, making it a second-generation hybrid. It inherits the advantage of Caturra's short tree height. The variety name Catuai comes from an indigenous language meaning "very good." As a member of the Arabica family, Catuai has relatively high yields.

Brewing Method

Pour-over Panama Volcancito Estate. 15g coffee grounds, medium grind (small Fuji ghost tooth grinder #4), V60 dripper, water temperature 88-89°C. First pour 30g water, steam for 27 seconds, pour to 105g then stop. Wait until the water level in the coffee bed drops to half, then continue pouring slowly until 225g. Discard the tail end. Water-to-coffee ratio 1:15, extraction time 2:00.
