Pour-over Butterfly Coffee

15g of coffee grounds, medium grind (using Fuji Fuji ghost tooth blade grinder #4), V60 dripper, water temperature 88-89°C. First pour with 30g of water for a 27-second bloom, then pour to 105g and stop. Wait until the water level in the coffee bed drops to half, then continue pouring slowly until reaching 225g. Washed Processing Method

There are many washed processing methods today, but generally, after coffee cherries are harvested, floating beans are skimmed off, then pulp is removed. The coffee beans are then soaked in fermentation tanks, where enzymes in the water soften the mucilage attached to the parchment, and natural yeasts break down the sugars in the mucilage — this process is called fermentation. After fermentation completes, the coffee beans are moved to drying patios to sun-dry. During drying, the beans must be constantly turned to ensure even drying. Finally, they are stored in parchment in warehouses until green bean buyers place orders, at which point dehulling and bagging occur. Coffee processed this way has a clean cup, emphasizing bright, lively fruit acidity and clear fruit flavors and floral notes.
