In the unique growing environment of Boquete, there are naturally more exceptional coffees than just the renowned Geisha from Hacienda La Esmeralda. While this Geisha may be considered the king of coffees in terms of flavor, quality, and value, drinking Geisha daily would be quite extravagant. Moreover, even if financial constraints aren't an issue, consuming it like daily delicacies such as shark's fin and bear paw wouldn't be appropriate. The same applies to coffee – exploring widely allows for greater enjoyment and appreciation of coffee tasting.

Introduction to Panama Coffee

Panama is a Central American country, bordering Costa Rica to the west and Colombia to the east. Those familiar with single-origin coffee should know that Panamanian coffee is famous in the coffee world for Hacienda La Esmeralda's Geisha variety. It can be said to be a country that pursues excellence in coffee and produces high-quality beans.

The "Floral Butterfly" Coffee

In the land of Boquete, there exists a coffee bean with exceptional value for money, bearing a beautiful name – "Floral Butterfly." It possesses 40% superior Geisha heritage, composed of three varieties: Geisha, Caturra, and Catuai. It is grown in the Baru Volcano region of Boquete, at an altitude of 1600 meters in volcanic terrain. The processing plant uses refined washed processing methods. Panama's unique microclimate results in abundant rainfall in this region and significant temperature variations between day and night. Combined with the region's unique volcanic soil and meticulous harvesting and processing, this coffee excels in body, acidity, and floral notes.

Processing Methods

Today, there are many washed processing methods, but generally, after coffee cherries are harvested, floating beans are removed, then the pulp is stripped. The coffee beans are then soaked in fermentation tanks, where enzymes in the water soften the mucilage attached to the parchment, and natural yeasts break down the sugars in the mucilage. This process is called fermentation. After fermentation is complete, the coffee beans are moved to drying patios to sun-dry, requiring constant turning during drying to ensure evenness. Finally, they are stored in parchment in warehouses until green bean buyers place orders, after which hulling and bagging are performed. Coffee processed this way has a clean cup, emphasizing bright, lively fruit acidity and clear fruit flavors and floral notes.

What's even more surprising is that despite its excellent quality, the very approachable price makes this coffee bean's value for money exceptional. The special characteristic of this coffee bean lies in its composition of three varieties, including 40% Geisha, which gives this coffee distinct Geisha flavors. Research indicates that due to the estate's historical reasons, when pursuing yield in earlier times, early Geisha varieties were interplanted with Caturra and Catuai coffee trees. To facilitate harvesting, coffee farmers didn't reclassify them but instead processed all three varieties together. Later, when Geisha became famous and prices soared, the processing plant began refining the washed processing methods for this specific coffee bean.

Brewing Method

Hand-pour Floral Butterfly. 15g of coffee, medium grind (using Fuji's "ghost tooth" grinder setting 4), V60 dripper, water temperature 88-89°C. First pour 30g of water for a 27-second bloom, then pour to 105g and stop. Wait until the water level drops to halfway before continuing to pour. Slowly pour until reaching 225g, avoiding the tail section. Water-to-coffee ratio 1:15, extraction time 2:00.

Panamanian coffee is famous for Hacienda La Esmeralda's Geisha, and the region where this estate is located is also quite well-known – it's the Boquete region in Chiriqui province. Boquete is a town in Chiriqui province, situated near the Panama-Costa Rica border, close to the famous Baru Volcano. With beautiful scenery, fertile and rich soil, and climate and soil conditions perfect for producing quality coffee.

Panama's east-to-west environmental pattern causes cold air currents to converge above 6500 feet through the central mountain range, creating various microclimates in the Boquete area. The temperature and rainfall are ideal for plant growth, so coffee trees planted here grow exceptionally well.
